Description

This summer dessert with pineapple and strawberries is an explosion of freshness! Prepared with creamy mascarpone, soft whipped cream, canned pineapple and fresh strawberries, it is perfect for ending a summer dinner or for a tasty snack. The preparation is simple and quick, also ideal for those who do not have much experience in the kitchen. I love it because it is light, tasty and prepared in just 30 minutes. A fresh and fruity alternative to the classic tiramisu, which will win over all your guests. Try it, you won't regret it!

Ingredients (7 ingredients)

  • Canned pineapple
  • Mascarpone
  • Whipping cream
  • Strawberries
  • Ladyfingers
  • Sugar
  • Mint leaves

Preparation (10 steps)

Preparation of the mascarpone cream

20 sec/Speed 3

Put the mascarpone and sugar in the bowl. Mix for 20 Sec./Stufe 3 until you get a soft and homogeneous cream. Transfer the cream to a bowl and set aside.

Whip the cream

Thermomix® Setting
2 min/Speed 3.5

Insert the butterfly whisk. Pour the cream into the bowl and whip for 2 Min./Stufe 3.5 until stiff. Gently combine the whipped cream with the mascarpone cream prepared previously, mixing with a spatula to blend the ingredients.

Pineapple preparation

Drain the canned pineapple from its liquid, keeping the latter. Cut the pineapple slices into small pieces and set aside.

Preparation of the strawberry puree

15 sec/Speed 8

Cut the strawberries into small pieces, setting aside some for the final decoration. Put the chopped strawberries in the bowl and blend for 15 Sek./Stufe 8 until you get a smooth puree.

Dessert assembly (first layer)

Distribute a layer of mascarpone cream on the bottom of each glass.

Ladyfingers immersion

Quickly dip the ladyfingers in the reserved pineapple syrup and arrange them over the layer of cream in the glasses.

Second layer: strawberry puree and pineapple

Cover the ladyfingers with a thin layer of strawberry puree, then add some pieces of canned pineapple.

Repetition of layers

Continue with another layer of ladyfingers quickly dipped in the syrup, a spoonful of strawberry cream, the diced pineapple and finish with another layer of mascarpone cream.

Final decoration

Decorate the dessert with the remaining strawberry puree and with the pieces of strawberries and pineapple that you have kept aside.

Garnish

Complete with a few fresh mint leaves.
