Description

These filled cookies with jelly and white chocolate are a vegan dessert that is easy to prepare with the Thermomix®. The main ingredients are jelly, vegan white chocolate, flour, and vegan butter. Preparation takes about 75 minutes and yields 20 servings. Ideal as finger food for festive occasions or as a sweet treat in between. Suitable for anyone who loves vegan cookies.

Ingredients (8 ingredients)

  • Raspberry or Strawberry Jelly
  • (vegan) white chocolate
  • 150 g Flour
  • 20 g Cornstarch
  • 100 g (vegan) Butter
  • 50 g Sugar
  • 1 Päckchen Vanilla Sugar
  • Lemon zest (optional)

Preparation (7 steps)

Prepare the dough

Thermomix® Setting

Place flour, cornstarch, vegan butter, sugar, vanilla sugar and optional lemon zest in the mixing bowl and process for 2 min./kneading setting to form a dough. If the dough is too crumbly, add 1 tbsp of water or milk and knead again for 30 sec./kneading setting.

Chill the dough

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Shape cookies

Roll out the dough thinly and cut out about 20 circles (approx. 4 cm in size). Place the circles on a baking sheet lined with baking paper. Place a small dollop of raspberry or strawberry jelly in the center of each circle.

Process dough scraps

Knead the remaining dough together and divide into 20 portions. Press each portion one after the other through a garlic press onto the cookies. At the end, always cut off the dough with a sharp knife so that it does not stick to the press.

Form and fill hollow

Press a small hollow in the middle and add some jelly.

Bake

Bake the cookies in a preheated oven at 180°C top/bottom heat for about 12 minutes.

Decorate

Let the cookies cool and sprinkle with grated white chocolate.
