Description

This Three-Coloured Salad is a real classic of Italian cuisine and an absolute must for every summer! The combination of juicy tomatoes, creamy mozzarella and fresh basil is simply unbeatable. I especially like to make it when I have guests, because it is quick to prepare and tastes good to everyone. The dish is vegetarian and gluten-free, so suitable for many diets. A dash of high-quality olive oil rounds it off perfectly. Enjoy your meal!

The Three-Coloured Salad, a tribute to the colours of the Italian flag, is much more than just a simple salad. It is a symbol of our cuisine, an explosion of fresh and genuine flavours that immediately evoke summer and conviviality. I still remember when, as a child, I prepared it with my grandmother in her small garden in the countryside. The juicy and fragrant freshly picked tomatoes, the fresh buffalo mozzarella of the day and the basil with its intense aroma were the magic ingredients that transformed a simple lunch into a feast. The mozzarella, preferably from Campania buffalo for its creamy texture and delicate flavour, is the element that gives the salad softness and roundness. Its sweetness contrasts perfectly with the acidity of the tomatoes. The tomatoes, strictly ripe and juicy, are the beating heart of this preparation. Choose the variety you prefer, from classic beef heart tomatoes to sweeter cherry tomatoes, the important thing is that they are rich in flavour and fragrant. Extra virgin olive oil, a real liquid gold, binds all the ingredients together, enhancing the flavours and giving a touch of elegance. A pinch of fine salt and a grind of black pepper complete the work, balancing the flavours and giving a touch of liveliness. Finally, fresh basil, with its unmistakable scent, is the icing on the cake, the element that gives freshness and aroma to the salad. To prepare this salad with the Thermomix®, I found that speed 4 is perfect for obtaining an ideal consistency for both the mozzarella and the tomatoes. Do not blend for too long, otherwise you will get a puree! The goal is to obtain irregular pieces, which maintain their consistency and release their juices. If you prefer a more rustic version, you can cut the ingredients by hand, obtaining a more irregular and material result. For a vegetarian variant, you can use mozzarella without animal rennet. For a vegan version, you can replace the mozzarella with smoked tofu cut into cubes or with sliced ​​ripe avocado. As for the spices, you can add a pinch of dried oregano or a few fresh mint leaves for a touch of originality. The Three-Coloured Salad is perfect as a light and fresh starter, ideal for a summer lunch or an informal dinner. You can serve it with toasted bread croutons, hot focaccia or crunchy breadsticks. It goes perfectly with a fresh and fruity white wine, such as a Vermentino or a Pinot Grigio. The Three-Coloured salad is best enjoyed freshly prepared, to best appreciate the freshness of the ingredients. However, if you have to prepare it in advance, I recommend cutting the ingredients separately and dressing them only when serving, to prevent the tomatoes from releasing too much water and the mozzarella from becoming rubbery. If there are any leftovers, you can store it in the refrigerator in an airtight container for a maximum of one day.
