About this recipe

This fruity breakfast bowl is more than just a recipe for me; it is a small morning routine that I give myself. It all started with the desire to spice up my morning smoothie and bring a little more texture and freshness to the day. Inspired by the colorful Acai bowls seen on social media, I created my own Thermomix®-friendly version. The base of this bowl is a creamy smoothie made from bananas, blueberries and coconut milk. The bananas provide a natural sweetness and a smooth consistency, the frozen blueberries provide a slightly sour note and a beautiful color. The coconut milk rounds off the whole thing with its tropical sweetness and makes the smoothie incredibly creamy. It is important that the bananas are really ripe, almost overripe. They are then sweeter and easier to puree. The blueberries should be frozen so that the smoothie becomes nice and cold and thick. The Thermomix® makes preparing the smoothie child's play. The banana pieces, blueberries and coconut milk are simply placed in the mixing bowl and pureed on the highest setting. Make sure you don't fill the mixing bowl too full so that everything is pureed evenly. If necessary, you can briefly interrupt the process and push the mixture down with the spatula. But the real magic of this bowl lies in the toppings. The fresh kiwi and banana slices bring an additional freshness and sweetness into play. The coconut chips provide a wonderful crunch and a slightly nutty taste. And the flaxseeds provide valuable omega-3 fatty acids and fiber. You can let your creativity run wild here! Instead of kiwis, you could also use strawberries, raspberries or mango. Instead of coconut chips, chopped nuts, almonds or chia seeds are also suitable. For a vegan version, make sure that the coconut milk is purely plant-based. You could also add some vanilla extract or cinnamon to the smoothie to give it a special touch. If you like it a little sweeter, you can add a teaspoon of maple syrup or agave syrup. The finished bowl is best enjoyed immediately. But you can also prepare the smoothie and keep it in the refrigerator. You should then add the toppings shortly before serving so that they do not become soggy. If you prepare the smoothie, it may settle a little. Simply stir briefly before serving. This breakfast bowl is not only delicious, but also incredibly nutritious. It gives you energy for the whole morning and provides you with important vitamins and minerals. A perfect start to the day!
