Description

This gazpacho with flat peaches is a refreshing and delicious variant of the classic Andalusian gazpacho. The flat peach, with its soft sweetness and juicy texture, gives it a special touch and makes it a perfect option for hot summer days. Preparing it with the Thermomix® is very simple and fast, ideal for enjoying a light and healthy meal. I prepare it often in summer, and it's always a success! It can be served as a starter or as a refreshing cold soup. In addition, it is a vegetarian and gluten-free recipe, suitable for almost everyone.

Ingredients (9 ingredients)

  • 500 gr ripe tomato (gazpacho)
  • 160 gr flat peach (weight peeled and boneless)
  • 20 gr onion
  • 10 gr green pepper
  • 1 clove small garlic
  • 60 ml olive oil
  • 2.5 cucharadas soperas red wine vinegar
  • to taste Salt
  • 150 ml Water

Preparation (10 steps)

Prepare the tomatoes

Wash 500 g of ripe tomatoes and cut them into large pieces. Reserve in a large container with a lid.

Prepare the flat peaches

Wash and peel 160 g of flat peaches. Cut them into pieces, discarding the pit, and add them to the container with the tomatoes.

Prepare the pepper

Wash and chop 10 g of green pepper. Add to the container with the other ingredients.

Chop the onion and garlic

Peel 20 g of onion and 1 clove of small garlic. Add them to the container with the rest of the ingredients.

Add the liquids and salt

Add 60 ml of olive oil, 2.5 tablespoons of red wine vinegar and salt to taste to the container. Stir well to mix all the ingredients.

Macerate in the refrigerator

Cover the container and let it macerate in the refrigerator for approximately 1 hour.

Crush the ingredients

Pour all the macerated ingredients into the Thermomix bowl. Crush 30 sec./Stufe 10 until obtaining a fine cream.

Strain and adjust the texture

Strain the gazpacho through a fine sieve to remove the skins and lumps. Add 150 ml of water (or more, depending on the desired consistency) and mix 10 Sek./Stufe 3.

Adjust the flavour

Thermomix® Setting
5 sec/Speed 2

Taste the gazpacho and correct the point of salt and vinegar to taste. Mix 5 Sek./Stufe 2 to integrate the flavors.

Cool and serve

Reserve the gazpacho in the refrigerator until serving time. Serve cold.
