Description

This green gazpacho is a refreshing and flavorful version of the classic Andalusian gazpacho. Ideal for hot summer days, this cold soup combines green tomatoes, creamy avocado, crunchy cucumber and a touch of green pepper. Prepared in the Thermomix®, it is incredibly easy to make and perfect as a light starter or appetizer. Iberian ham and chopped chives add a touch of sophistication, while extra virgin olive oil enhances all the flavors. A healthy and delicious dish that everyone will love!

Ingredients (15 ingredients)

  • 4 piece Large green tomatoes
  • 2 piece Avocados
  • 1 piece Large cucumber
  • 1 piece Medium green pepper
  • 0.5 piece onion
  • 0.5 clove garlic
  • 80 g Day-old bread
  • 200 ml water
  • 15 ml Sherry vinegar
  • to taste Salt
  • 80 ml Extra virgin olive oil
  • 60 g Iberian ham in very small pieces
  • Very finely chopped chives
  • to taste Croutons
  • Extra virgin olive oil

Preparation (7 steps)

Preparation of the vegetables

Peel and chop the green tomatoes, avocados, cucumber and green pepper. Set aside.

Soaking the bread

Place the day-old bread in a container with a little water to soften it.

Crush the ingredients

Thermomix® Setting
4 min/Speed 10

Add the chopped green tomatoes, avocados, cucumber, green pepper, onion, garlic (without the central stem), drained bread, water, Sherry vinegar and salt to the Thermomix bowl. Crush for 4 Min./Stufe 10.

Emulsify with oil

Thermomix® Setting
1 min/Speed 5

With the Thermomix running at Stufe 5, pour the extra virgin olive oil little by little through the pouring spout for 1 Min./Stufe 5.

Adjust the salt and cool

Taste and correct the salt if necessary. If a finer texture is desired, pass the gazpacho through a sieve. Pour into an airtight container and refrigerate for at least 4 hours.

Prepare the garnish

While the gazpacho cools, chop the Iberian ham into very small pieces and the chives very finely chopped. Set aside separately.

Serve

Serve the gazpacho well chilled in individual bowls. Add the chopped Iberian ham, chopped chives and croutons. Finish with a drizzle of extra virgin olive oil on top.
