Ingredients (13 ingredients)

  • 8 strips bacon
  • 1 stalk celery, finely chopped
  • 2 tablespoons minced fresh garlic
  • 5 cups finely chopped cauliflower
  • 2 tablespoons water
  • 1 teaspoon onion powder
  • 2 cups milk
  • 2 cups chicken broth, divided
  • 3 dashes hot sauce, or to taste (Optional)
  • 2 tablespoons all-purpose flour
  • 2 cups shredded sharp Cheddar cheese
  • salt
  • ground black pepper

Preparation (11 steps)

Cook the bacon

Cook bacon in a pan over medium heat until crispy. Transfer to a paper towel-lined plate with a slotted spoon, leaving drippings in the pan. Crumble bacon; set aside.

Sauté celery and garlic

Add celery and garlic to the pan with bacon drippings; cook until celery is tender, about 3 to 4 minutes. Transfer to the Thermomix bowl.

Add cauliflower, water, and onion powder

Add 5 cups finely chopped cauliflower, 2 tablespoons water, and 1 teaspoon onion powder to the Thermomix bowl.

Steam the cauliflower

Thermomix® Setting

Cover and steam cauliflower, stirring occasionally, until cauliflower is tender, about 5 minutes. Set the Thermomix to 100°C/Stufe 1/300 Sek.

Add milk, broth, and hot sauce

Add 2 cups milk, 1 3/4 cups chicken broth, and 3 dashes hot sauce to the Thermomix bowl.

Bring to a boil

Thermomix® Setting

Bring the mixture to a boil by setting the Thermomix to 100°C/Stufe 2/300 Sek.

Prepare flour mixture

Whisk 2 tablespoons all-purpose flour into remaining 1/4 cup chicken broth in a small bowl.

Thicken the chowder

Slowly stir the flour mixture into the boiling chowder in the Thermomix. Set the Thermomix to 100°C/Stufe 2/60 Sek.

Add 2 cups shredded sharp Cheddar cheese and 1/2 of the crumbled bacon to the Thermomix bowl.

Melt cheese and combine

60 sec/140°F/Speed 2 60 Reverse

Stir until smooth and cheese has melted. Set the Thermomix to 60°C/Stufe 2/60 Sek./Linkslauf.

Season with salt, ground black pepper, and hot sauce to taste. Top servings with remaining 1/2 bacon.
