Glazed carrots with a honey-mustard marinade, served with a yogurt dip and roasted hazelnuts.

Ingredients (17 ingredients)

  • 1 kg Carrots
  • 50 g Butter, in flakes
  • 0.5 tsp Chili flakes
  • 2 tsp Mustard, grainy
  • 2 tbsp Blossom honey
  • 0.5 tsp Coriander seeds, coarsely crushed
  • Lemon juice
  • Olive oil for searing
  • 4 tbsp Water
  • 400 g Plain yogurt or greek yogurt
  • 0.5 piece Juice of lemon
  • 4 piece Garlic cloves, pressed
  • 2 tbsp Dill, fresh and chopped
  • Roasted hazelnuts, chopped
  • Dill, fresh
  • Salt
  • Pepper

Preparation (7 steps)

Prepare carrots

Depending on the size, leave the carrots whole or halve them lengthwise. Heat olive oil in a pan, add the carrots and sear briefly.

Cook carrots

Thermomix® Setting

Add 4 tbsp of water and cook covered over medium heat for about 5 minutes until the water has evaporated. Remove the lid, increase the heat, distribute 50 g of butter in flakes on the carrots and let it melt.

Fry carrots

Turn the carrots and fry for another 2-3 minutes until both sides are nicely golden brown. Drizzle melted butter over the carrots again and again.

Prepare honey-mustard-marinade

Thermomix® Setting
10 sec/Speed 3

Put 2 tbsp of blossom honey, 2 tsp of mustard, ½ tsp of chili flakes and ½ tsp of coriander seeds into the mixing bowl and mix for 10 sec./level 3.

Caramelize carrots

Pour the honey-mustard marinade over the carrots, carefully toss and cook for another 2-3 minutes until they caramelize slightly. Drizzle with some lemon juice.

Prepare yogurt dip

Put 400 g plain yogurt or Greek yogurt, juice of ½ lemon, 4 garlic cloves (cut into the mixing bowl with the WunderSlicer V2 and the fine disc and catch), 2 tbsp dill, salt and pepper into the mixing bowl and mix for 15 sec./level 3.

Arrange

Spread the yogurt on four plates, place the carrots on top. Sprinkle roasted, chopped hazelnuts and fresh dill over it and garnish with fresh dill.
