Description

This dish of creamy chicken fillets with mushrooms is a real comfort food, perfect for autumn evenings. The combination of tender chicken with the creamy porcini mushroom sauce is simply delicious. I often prepare it when I have guests for dinner because it is easy to make and everyone always likes it. Preparation is quick, about 15 minutes, and cooking takes only 35 minutes. A tip? Serve it with a side of mashed potatoes or basmati rice for a complete and satisfying meal. A true classic revisited with the Thermomix®!

Ingredients (12 ingredients)

  • 500 g Chicken breast
  • 250 g Porcini mushrooms
  • 200 ml Cream
  • 30 g Butter
  • 50 ml Dry white wine
  • 1 foglia Sage
  • 1 piece Onions
  • 1 clove Garlic
  • 1 piece Carrots
  • 1 bunch Parsley
  • 2 tbsp Extra virgin olive oil (EVO)
  • 1 pinch Salt

Preparation (7 steps)

Chop onion, garlic and carrot

Insert 1 onion, 1 clove of garlic and 1 carrot cut into pieces into the bowl. Chop for 3 Sec./Stufe 5.

Sauté the vegetables

Add 30g butter and 2 tablespoons of extra virgin olive oil to the bowl. Sauté for 3 Min./120°C/Stufe 1.

Cook the chicken

Add 500g chicken breast cut into fillets, 1 sage leaf and 1 pinch of salt to the bowl. Cook for 5 Min./120°C/Stufe 1.

Deglaze with white wine

Thermomix® Setting
20 min/212°F/Speed 1 100

Deglaze with 50ml dry white wine. Cook for 20 Min./100°C/Stufe 1, without the measuring cup, to evaporate the alcohol.

Add the mushrooms

10 min/212°F/Speed 1 100

Add 250g porcini mushrooms cut into pieces. Cook for 10 Min./100°C/Stufe 1.

Add the cream

Add 200ml cream. Cook for 5 Min./90°C/Stufe 1.

Serve the chicken fillets with mushrooms with a sprinkling of chopped parsley.
