I love cooking with seasonal ingredients, and in spring, ramson is simply unbeatable! This game burger with homemade ramson pesto is a real highlight. The juicy game ground meat harmonizes perfectly with the spicy pesto and creamy mozzarella. Preparation is super easy and quick with the Thermomix®. A great dish for a relaxed lunch or a cozy barbecue with friends. If you like, you can add some arugula or lamb's lettuce. The recipe can also be easily varied with other game meat.

Ingredients (12 ingredients)

  • 600 Gramm Red deer ground meat
  • 250 Gramm Mozzarella
  • 4 x Burger buns
  • 8 slice Smoked wild boar bacon
  • 1 Bündel Ramson
  • 1 x Organic orange
  • 50 Gramm Sunflower seeds , peeled
  • 1 piece Parmesan
  • 1 Schluck Olive oil
  • 1 piece Clarified butter
  • 8 x Cherry tomatoes
  • 1 x Salt and pepper

Preparation (8 steps)

Prepare and season game ground meat

Mix 600 grams of red deer ground meat with 1 x salt and pepper in a bowl and knead until the spices are well distributed and the ground meat starts to bind. Then form even patties of about 150g and refrigerate until further processing.

Roast sunflower seeds

3 min/248°F/Speed 1 120

Put 50 grams of peeled sunflower seeds into the mixing bowl and roast for 3 min./120°C/speed 1 without a measuring cup. Then transfer and set aside.

Prepare ramson

Wash 1 bunch of ramson, shake dry and chop roughly.

Prepare ramson pesto

15 sec/Speed 8

Put the prepared ramson, the roasted sunflower seeds, some coarse sea salt and pepper into the mixing bowl and process into a fine mash for 15 sec./speed 8. Scrape down from the edge with the spatula.

Refine pesto

Thermomix® Setting
10 sec/Speed 3

Add a dash of olive oil, a piece of grated Parmesan, the zest of half an organic orange and some juice to the mixing bowl and stir for 10 sec./speed 3. The pesto should not become too liquid.

Fry bacon

Cut 8 slices of smoked wild boar bacon into thin strips and fry crispy in a pan without Thermomix. Then drain on kitchen paper.

Fry burger

Heat some clarified butter in a pan and sear the prepared game ground meat patties in a hot pan from both sides for about 1 minute each. Then reduce the heat, place mozzarella slices on top and fry the patties for another 2-3 minutes until the cheese starts to melt.

Top burger

Top the bottom of the 4 burger buns with the meat and mozzarella, ramson pesto, crispy wild bacon and halved 8 cherry tomatoes. Garnish with small ramson leaves and serve.

This game burger with ramson pesto is my homage to spring and the hunting tradition of my family. Even as a child, I accompanied my father and grandfather on the hunt and learned to appreciate the value and quality of game meat. The combination of the strong game taste and the fresh, spicy ramson is simply unbeatable. The red deer ground meat forms the basis for this burger. It is lean, high in protein and has an intense, slightly wild taste. When buying, make sure you get a good quality and it is best to ask the hunter you trust. The mozzarella provides a creamy texture and slightly softens the spiciness of the ramson pesto. The smoked wild boar bacon brings a smoky note and additional seasoning into play. The ramson pesto is the heart of this burger. The ramson, also known as "wild garlic", has an intense garlic aroma, but is milder and fresher than that of conventional garlic. The roasted sunflower seeds give the pesto a nutty note and provide a pleasant texture. The Parmesan contributes umami and binds the flavors. The zest and a splash of juice from the organic orange bring a fruity freshness into play and harmonize wonderfully with the game taste. When preparing in the Thermomix®, it is important not to mix the ramson for too long, as it can otherwise become bitter. Make sure that the pesto does not become too liquid. Therefore, add the olive oil only gradually until the desired consistency is reached. The roasted sunflower seeds should be cooled before mixing so that they do not heat the pesto. For a vegetarian option, you can replace the game ground meat with a mixture of fried mushrooms (e.g. king oyster mushrooms, button mushrooms) and lentils. Instead of wild boar bacon, you can use smoked tofu. For a vegan version, replace the mozzarella with a vegan cheese alternative and the Parmesan in the pesto with nutritional yeast. Serve the game burger with ramson pesto on a fresh burger bun. Fries, sweet potato fries or a crunchy salad go well with it. If you like, you can garnish the burger with arugula, lamb's lettuce or sprouts. A glass of cold beer or a dry red wine rounds off the taste experience. The ramson pesto can be kept in the refrigerator in an airtight container for a few days. You can also freeze it in portions. You can prepare the game ground meat patties the day before and store them in the refrigerator. This saves you time when preparing.
