Description

This Levantine bread salad, also known as Fetoosh, is a refreshing and aromatic salad that tastes especially good in summer. The combination of crisp iceberg lettuce, juicy tomatoes and cucumbers, fresh herbs and crispy bread cubes makes it an absolute highlight. The pomegranate powder gives the salad a special sweet and sour note that makes it unmistakable. I love serving this salad as a light meal or as a side dish for grilling. It is quick to prepare and can be varied wonderfully. A splash more lemon juice or a few extra olives - according to taste!

Ingredients (11 ingredients)

  • 1 piece Iceberg lettuce
  • 2 piece Tomatoes, medium-sized
  • 2 piece Cucumbers, small
  • 2 clove Garlic
  • 1 tbsp Peppermint, chopped
  • 1 tbsp Parsley, chopped
  • 1 tsp Salt
  • 1 tsp Somar (Pomegranate powder)
  • Olive oil
  • 1 piece Lemon, juice of
  • 60 g Flatbread or white bread or country bread, cubed

Preparation (5 steps)

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Place 2 cloves of garlic in the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare vegetables

Wash 1 iceberg lettuce, 2 medium-sized tomatoes and 2 small cucumbers and cut into small cubes. Prepare 1 tbsp chopped peppermint and 1 tbsp chopped parsley.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Add the chopped garlic, 1 tsp salt, 1 tsp pomegranate powder (Somar), olive oil and the juice of 1 lemon to the mixing bowl and mix for 10 sec./speed 3.

Mix salad

Place the diced vegetables and chopped herbs in a large bowl. Pour the dressing from the mixing bowl over it and mix well.

Prepare bread cubes

Fry/deep-fry 60 g diced flatbread (or white bread/country bread) in a pan with plenty of oil until golden brown and crispy. Serve warm over the salad.
