Description

This colorful salad with tender veal strips is a light and refreshing dish, perfect for warm summer days. The combination of crisp iceberg lettuce, spicy rocket and sweet cherry tomatoes is wonderfully complemented by the savory meat strips and the fresh aroma of spring onions. A touch of honey and soy sauce gives the salad a special touch. The preparation is straightforward and quick, so you can have a delicious and healthy dish on the table in no time. Crispy rye rolls go well with this.

Ingredients (12 ingredients)

  • 0.5 Kopf Iceberg lettuce
  • 1 bunch Rocket
  • 250 g Cherry tomato(es)
  • 1 can Corn
  • 1 bunch Spring onion(s)
  • 2 piece Veal escalope a 200 g
  • 2 tbsp Olive oil
  • 1 tbsp Salt
  • 1 tbsp Black pepper
  • 1 tbsp Honey liquid
  • 1 tbsp Soy sauce
  • 4 piece Rolls rye

Preparation (4 steps)

Prepare spring onions

Wash, clean and cut the spring onions diagonally into approximately 3 cm long pieces. Then place in a bowl and set aside.

Prepare dressing

Thermomix® Setting

Put 1 tbsp mustard, 1 tbsp honey and 1 tbsp soy sauce with 4 tbsp water into the mixing bowl and stir for 10 sec./speed 3.

Transfer dressing

Pour the dressing from the mixing bowl into a bowl and set aside.

Prepare salad

Wash, clean and spin dry the iceberg lettuce and rocket. Divide both into bite-sized pieces. Wash the tomatoes and halve them crosswise. Drain the corn in a sieve. Place everything in a large bowl.

About this recipe

For me, this salad is a piece of summer on a plate. It reminds me of the balmy evenings in my grandmother's garden, where we enjoyed simple but delicious meals after a long day outdoors. Of course, back then without Thermomix®, but the basic idea – fresh, seasonal ingredients combined with a light dressing – has remained. The iceberg lettuce forms the crisp base. It's not the most flavorful lettuce, but its freshness and pleasant bite are unbeatable. The rocket, on the other hand, brings a spicy, slightly peppery note to the mix, which harmonizes perfectly with the sweetness of the cherry tomatoes. These small, sun-ripened tomatoes literally burst in your mouth and release their sweet juice. The corn provides an additional sweetness and texture, while the spring onions add a pleasant spiciness with their mild onion aroma. The veal, cut into fine strips and briefly fried, is the star of the salad. It provides a hearty component and makes the salad a complete meal. The preparation with the Thermomix® is very simple. First, the spring onions are prepared. Make sure to cut them at an angle, which not only looks nicer, but also increases the surface area and intensifies the aroma. The dressing is quickly mixed together in the Thermomix®. I like to use liquid honey because it blends better with the other ingredients. If you don't like honey, you can replace it with maple syrup or agave syrup. It is important to let the dressing sit for a short time after mixing so that the flavors can develop. While the dressing is sitting, you can prepare the salad. Make sure to wash and dry the lettuce thoroughly so that it doesn't get soggy. I fry the veal in a separate pan because it can quickly become tough in the Thermomix®. Heat two tablespoons of olive oil in the pan and fry the veal strips briefly and sharply until they are lightly browned. Season with salt and pepper. For a vegetarian version, you can replace the veal with fried halloumi cubes or smoked tofu. Chickpeas or white beans also go well in the salad and provide additional protein. If you like it a little spicier, you can add a pinch of chili to the dressing. Serve the salad best freshly prepared. Crispy rye rolls or a piece of baguette go well with it. A glass of chilled white wine or a refreshing iced tea perfectly round off the dish. The salad can be prepared well in advance. Store the salad and dressing separately and mix just before serving. The veal should also be stored separately and added to the salad just before serving so that it does not become tough. This way you can easily take the salad to the office or prepare it for a picnic.
