Description

This festive apple and fruits in syrup salad is a Christmas classic that never fails. The combination of fresh apples, crunchy carrots and juicy fruits in syrup, all bathed in a sweet and smooth cream, makes it an irresistible dish. Perfect to accompany turkey or any main dish at Christmas dinner. It is prepared in a short time and can be left to stand so that the flavors mix even more. A sweet and refreshing touch for these holidays! Also, it is a vegetarian option that everyone will love.

Ingredients (9 ingredients)

  • 2 kilogramos apples
  • 1 kilogramos carrots
  • 1 can peaches or peaches in syrup
  • 1 can pineapple in syrup
  • 0.5 can cherries in syrup
  • 100 gramos broken nuts
  • 100 gramos raisins
  • 0.5 litro whole cream
  • 1 can condensed milk

Dressing preparation

In the Thermomix glass, pour ½ liter of whole cream and 1 can of condensed milk. Beat the mixture for 20 seconds at speed 4 until it foams slightly. Remove the dressing from the glass and reserve.

Chopping the fruits in syrup

Chop into small cubes 1 can of peaches or peaches in syrup and 1 can of pineapple in syrup (except the cherries). Add the chopped fruits to the reserved dressing along with 100 grams of broken nuts and 100 grams of raisins. Mix well with a spatula and let the Christmas fruit salad rest.

Grated carrots

Peel 1 kilogram of carrots and cut them into pieces. Place the pieces in the Thermomix glass and grate for 5 seconds at speed 5. Remove the grated carrots from the glass and reserve them in a container.

Chopped apples

Peel 2 kilograms of apples, cut them into cubes and add them to the container with the grated carrot. Mix well.

Final mixture

Add the carrot and apple mixture to the cream with the fruits in syrup. Mix gently with a spatula until all the ingredients are well integrated.

Serve and decorate

Serve the salad in glasses or individual containers and garnish each portion with one or two cherries in syrup.

My grandmother always prepared it, and its aroma flooded the house, creating a warm and cozy atmosphere. It was the perfect side dish for turkey, and although simple, it was always the star of the sweet table. The apples, preferably Granny Smith or Golden Delicious, provide an acidic and crunchy touch that contrasts wonderfully with the sweetness of the syrup. The carrots, finely grated, add a crunchy texture and a subtle earthy sweetness. The fruits in syrup, peaches and pineapple, are the heart of this salad, providing juiciness and a sweet and tropical flavor. The cherries in syrup, with their intense red color, are the final touch, an ornament that announces the party. The nuts, lightly toasted, offer a crunchy contrast and a nutty flavor that perfectly complements the rest of the ingredients. The raisins, previously soaked in rum or brandy (optional), provide a touch of warmth and a concentrated sweetness. The whole cream and condensed milk create a rich and creamy dressing that brings all the flavors together. To prepare the dressing in the Thermomix®, it is important that the cream is very cold so that it whips better. If you want a lighter texture, you can replace part of the whole cream with natural Greek yogurt. When grating the carrots, be careful not to exceed the indicated time, as they could become too soft. If you don't have a Thermomix®, you can grate them by hand with a coarse grater. When chopping the apples, sprinkle them with a little lemon juice to prevent them from oxidizing and turning brown.
