Description

I love preparing these chicken thighs with mixed vegetables! It is a single dish, rich in flavors and colors, perfect for a family dinner or with friends. Seasonal vegetables, such as carrots, celery, courgettes, peppers, cabbage and onions, go perfectly with the tender chicken meat. The marinade in soy sauce and cane sugar gives an irresistible sweet and sour touch. The beauty of this recipe is that it prepares almost by itself and can be customized with the vegetables you have available. A real comfort food!

Ingredients (10 ingredients)

  • 4 piece Chicken thigh
  • 2 piece Carrots
  • 2 costa Celery
  • 2 piece Courgettes
  • 1 piece Yellow peppers
  • 1 piece Cabbage
  • 1 piece Onions
  • 300 ml Water
  • Soy sauce
  • Cane sugar

Preparation of the vegetables

Wash all the vegetables thoroughly. Put carrots, celery, courgettes, yellow peppers, cabbage and onions cut into coarse pieces into the bowl and chop for 5 Sec./Stufe 5. Transfer the chopped vegetables to a large bowl.

Preparation of the marinade

In a bowl, dilute the soy sauce with 300 ml of water. Add the cane sugar and mix until completely dissolved.

Marinating the chicken and vegetables

Arrange the chicken thighs and vegetables in a baking dish. Pour the marinade over the chicken and vegetables, making sure they are well covered. Cover the baking dish with transparent film and marinate in the refrigerator for at least 8 hours, ideally overnight, turning occasionally.

Baking in the oven

Preheat the oven to 190°C. Transfer the marinated chicken and vegetables to a baking tray, without drying them too much. Salt everything. Bake for 40-45 minutes, basting the chicken and vegetables with the marinade during cooking.

Serve

At the end of cooking, serve the chicken thighs with the hot vegetables, drizzling everything with the cooking sauce.
