Prepare dough

Let the dough rest

Shape and divide dough

Place the dough on a floured work surface. Form into a ball and then divide into quarters.

Roll out and cut balls

Roll out each ball to a square about 0.5 cm thick and divide into strips of equal width and cut through again.

Cut slit and pull end through

Cut a slit in the middle and pull one end through.

Fry Krepli

Heat oil in a pan so that the Krepli float and fry both sides golden brown over medium heat.

Krepli, also known as rolled cakes, are pure childhood memories for me. My grandma, a master of traditional cuisine, always baked them for special occasions. The scent of fried dough and powdered sugar wafting through the house is unforgettable. This recipe is a tribute to her culinary art, adapted to the modern kitchen technology of the Thermomix®. The list of ingredients may seem simple, but each component plays an important role. The eggs provide the binding and a loose texture to the dough. Baking powder is the secret to the fluffy consistency of the Krepli. The sugar naturally contributes to the sweetness, but it also caramelizes during frying and gives the rolled cakes their golden brown color. A pinch of salt enhances the flavors and balances the sweetness. The sour cream and buttermilk make the dough particularly smooth and juicy. The flour is the basic structure, be sure to use a flour type 405 or 550 to achieve the best results. The Thermomix® makes preparing the dough child's play. Put all the ingredients in the mixing bowl and let the machine do the work. The kneading stage ensures a homogeneous and elastic dough. After kneading, the rest period is crucial. The dough must relax so that the gluten can develop. This makes it smoother and easier to roll out. Cover the bowl with a damp cloth to prevent the dough from drying out. When rolling out, it is important to flour the work surface well so that the dough does not stick. The thickness of the dough affects the texture of the Krepli. The thinner the dough, the crispier they become. Cutting the slit and pulling the end through takes some practice, but it's the trick to getting the typical rolled cake shape. When frying, make sure the oil is hot enough, but not too hot, otherwise the Krepli will burn on the outside before they are cooked on the inside. A temperature of about 170-180°C is ideal. The recipe is already suitable for a vegetarian version. A vegan version requires the replacement of eggs, sour cream and buttermilk. Here, plant-based alternatives such as applesauce (for the eggs), soy yogurt (for the sour cream) and plant-based milk with a dash of vinegar or lemon juice (for the buttermilk) can be used. Experiment with spices! A touch of cinnamon, cardamom or lemon zest gives the Krepli a special touch. Serve the Krepli warm or cold, sprinkled with powdered sugar. They go perfectly with coffee, tea or cocoa. A dab of jam or a bowl of vanilla sauce are a delicious addition. The finished Krepli can be stored well in an airtight container. They stay fresh for a few days. You can also prepare the dough and store it in the refrigerator. Let it take on some room temperature before rolling it out. This makes it easier to process.
