Description

This hearty herb lasagna is an absolute highlight for everyone who loves vegetarian food! I especially like to make it when guests come, because it can be prepared very well in advance. The fresh herbs give the lasagna a great note, and the combination of Ricotta and Mascarpone makes it incredibly creamy. The dried tomatoes provide an intense flavor. A dish that simply makes you happy and is perfect for cozy evenings. And the best thing: it is prepared in no time in the Thermomix®!

Ingredients (12 ingredients)

  • 2 bunch Herbs
  • 100 g Hard cheese
  • 2 tbsp Oil
  • 200 g Ricotta
  • to taste Salt
  • to taste Pepper
  • 200 g Whipping cream
  • 100 ml Vegetable broth
  • 100 g Mascarpone
  • 150 g Dried tomatoes in oil
  • 12 piece Lasagna sheets
  • 400 g Tomato sauce

Preparation (6 steps)

Prepare herbs and Parmesan

5 sec/Speed 5

Wash 2 bunches of herbs, shake dry and pluck the leaves. Place the leaves in the mixing bowl and chop for 5 seconds/speed 5. Add 100 g of hard cheese in pieces and grate for 10 seconds/speed 8. Remove half of the grated hard cheese and set aside.

Prepare herb ricotta mixture

Thermomix® Setting
20 sec/Speed 3

Put half of the grated hard cheese, 2 tablespoons of oil and 200 g of ricotta into the mixing bowl. Season with salt and pepper and stir for 20 seconds/speed 3.

Prepare cream sauce

Thermomix® Setting
8 min/194°F/Speed 2 90

Put 200 g of whipping cream, 100 ml of vegetable broth and 100 g of mascarpone into the mixing bowl and heat for 8 minutes/90°C/speed 2. Then add the remaining grated hard cheese and stir for 10 seconds/speed 3.

Prepare tomatoes

Drain 150 g of dried tomatoes in oil and chop coarsely.

Layer lasagna

Grease a casserole dish. Place 3 lasagna sheets in the dish. Spread half of the 400 g tomato sauce on top. Cover with 3 lasagna sheets. Spread the ricotta mixture on top. Cover with 3 lasagna sheets. Spread the dried tomatoes on top. Cover with the remaining 3 lasagna sheets. Pour the remaining tomato sauce and cream mixture over it.

Bake lasagna

Bake the lasagna in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 45 minutes.
