Description

This vegetarian lasagna with fresh vegetables is a hearty casserole from the Thermomix®. Onions, garlic, peppers, zucchini and carrots form the basis for the Italian specialty. Preparation in the Thermomix® takes about 75 minutes, of which 45 minutes are active working time. The recipe is designed for 6 servings and is ideal as a meal prep or for a family meal.

Ingredients (15 ingredients)

  • 1 Stück Onion
  • 2 Zehen Garlic
  • 600 g Vegetables (e.g. peppers, zucchini, carrots)
  • 1 EL Olive oil
  • 2 EL Tomato paste
  • 800 g Peeled tomatoes (can)
  • 2 EL Chopped parsley
  • 1 EL Sweet paprika powder
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 12 Stück Lasagna sheets
  • 150 g Grated cheese (e.g. Mozzarella)
  • 50 g Butter
  • 40 g Flour
  • 600 ml Milk

Chop onion and garlic

Place 1 peeled onion in the mixing bowl and chop for 3 sec./level 5. Add 2 cloves of garlic and chop for 3 sec./level 7. Use the spatula to push everything down from the edge.

Sauté onion and garlic

Add 1 tbsp olive oil and sauté for 3 min./120°C/level 1.

Prepare vegetables

Roughly chop 600 g vegetables (e.g. peppers, zucchini, carrots) and place in the mixing bowl. Chop for 5 sec./level 5. Use the spatula to push everything down from the edge.

Sauté vegetables and tomato paste

Add 2 tbsp tomato paste and sauté for 3 min./120°C/level 1.

Prepare tomato sauce

Thermomix® Setting

Add 800 g peeled tomatoes (can), 2 tbsp chopped parsley, 1 tbsp sweet paprika powder, salt and pepper and simmer for 5 min./100°C/level 1.

Prepare béchamel sauce

For the béchamel sauce, put 50 g butter in the mixing bowl and melt for 3 min./50°C/level 1.

Make roux

Add 40 g flour and sauté for 3 min./100°C/level 2.

Finish béchamel sauce

Add 600 ml milk and cook for 8 min./90°C/level 3 while stirring. Season with salt and pepper.

Preheat oven

Preheat oven to 200 degrees top and bottom heat.

Layer lasagna

Place a layer of vegetable sauce in a baking dish. Alternate layers of lasagna sheets (12 pieces), vegetable sauce and béchamel sauce, ending with the béchamel sauce.

Bake lasagna

Cover the vegetable lasagna with 150 g grated cheese (e.g. Mozzarella) and bake in the preheated oven for 30 minutes.
