Description

Lemon scaloppine are a classic of Italian cuisine, a simple and quick dish to prepare, perfect for a family dinner or with friends. The veal, tender and delicate, is enhanced by the scent and flavor of lemon, creating an irresistible combination. I often prepare them with my Thermomix®, which helps me to obtain a creamy and velvety sauce in a few minutes. This dish is ideal for those looking for a light and tasty alternative to the usual meat dishes. Serve them with a side of fresh vegetables or mashed potatoes for a complete and satisfying meal. A real comfort food!

Ingredients (6 ingredients)

  • 4 persone Veal
  • Lemon
  • Extra virgin olive oil (EVO)
  • Flour
  • White wine
  • Salt

Preparation (5 steps)

Initial preparation

Pour a generous drizzle of extra virgin olive oil into a large and capacious pan. Heat the oil over low heat (without Thermomix). Meanwhile, put the flour in a flat plate and pass the slices of veal on both sides. Set aside the floured slices.

Brown the meat

When the oil in the pan is hot (without Thermomix), put the floured slices and brown them for about a minute per side. Transfer the slices to a tray, leaving the pan on the heat.

Prepare the lemon sauce

Squeeze the lemon juice with a citrus juicer (without Thermomix). Pour the lemon juice into the same pan used for the meat, which you left on the heat. Also add the white wine and let the alcoholic part evaporate. It will be enough to smell the vapors coming from the sauce to understand if they still contain hints of alcohol (without Thermomix).

Complete the cooking

Put the veal slices back in the pan, flavor them with salt and cover the pan with a lid. Let the meat flavor over low heat (without Thermomix). The slices will be ready when a nice creamy sauce has formed.

Serve

Turn off the heat and serve the hot veal slices drizzling them with the lemon sauce. Adjust with salt if necessary (without Thermomix).
