Description

This Parmesan chicken breast dish is a delicious and easy way to transform a basic ingredient into a tasty and comforting meal. The combination of juicy chicken with crispy breadcrumb and parmesan cheese coating, topped with tomato sauce and melted mozzarella, is simply irresistible. Ideal for a quick weeknight dinner or to surprise your guests with a classic Italian dish. It prepares in less than an hour and is a guaranteed success! In addition, you can vary the type of cheese to melt according to your preferences.

Ingredients (11 ingredients)

  • 2 piece Chicken breast
  • Bread crumbs
  • 2 cucharadas Parmesan cheese
  • 1 tsp Dried basil
  • 1 tsp Dried oregano
  • Dried thyme
  • Ground black pepper
  • Salt
  • Tomato sauce
  • Mozzarella cheese or special slices for melting (emmental, havarti...)
  • Extra virgin olive oil

Preparation of the batter

Thermomix® Setting

In the Thermomix bowl, add the breadcrumbs, Parmesan cheese (2 tablespoons), dried basil (1 teaspoon), dried oregano (1 teaspoon), dried thyme to taste, ground black pepper and a pinch of salt. Mix for 10 seconds at speed 4.

Chicken coating

Preheat the oven to 200ºC. Clean the chicken breasts of any excess fat. Paint with a little extra virgin olive oil on both sides. Coat in the breadcrumb and cheese mixture, pressing well, making sure they are well covered. Arrange on a tray lined with aluminum foil.

Initial baking

Bake for 30 minutes at 200°C.

Add sauce and cheese

Cover the breasts with a few tablespoons of tomato sauce, top with one or two slices of special cheese for melting or sliced mozzarella and add a little pepper.

Final baking

Bake again for 5 more minutes until the cheese is well melted.
