Description

This Thermomix® recipe for oven potatoes with chanterelles is a hearty and simple main course with potatoes, fresh chanterelles and onions.   • 1 kg Potatoes, predominantly firm cooking
  • 500 g Chanterelles
  • 2 Zwiebeln Onions
  • 200 ml Cream
  • 150 g Grated cheese
  • 2 tbsp Oil
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Nutmeg
  • 1 bunch Parsley, chopped
  • 1 tsp Vegetable broth powder

Preparation (8 steps)

Chop onions

Peel and quarter onions and place in the mixing bowl. Chop for 3 sec./level 5.

Sauté onions

Add chanterelles

Clean the chanterelles, cut them into smaller pieces if necessary, and add them to the mixing bowl together with the vegetable broth powder. Sauté for 5 min./100°C/reverse rotation level 1.

Add cream and spices

Add cream, salt, pepper, nutmeg and chopped parsley to the mixing bowl and simmer for 5 min./90°C/reverse rotation level 1.

Prepare oven potatoes

Preheat oven to 200°C top/bottom heat. Peel the potatoes and cut into approx. 1 cm thick slices. Place potato slices in a baking dish and season with salt and pepper.

Pour sauce over potatoes

Pour the sauce from the mixing bowl over the potatoes in the baking dish.

Sprinkle cheese over it

Sprinkle the grated cheese over the potatoes and the sauce.

Bake

Place the baking dish in the preheated oven and bake for approx. 30 minutes until the potatoes are cooked and the cheese is golden brown.

Oven potatoes with chanterelles – a dish that has tradition in our home. My grandma always prepared it in the autumn when the chanterelles came fresh from the forest. The scent of fried mushrooms and cheese melting in the oven is a childhood memory that I still love today. The potatoes, preferably firm-cooking, form the basis of the dish. They are sliced and baked in the oven, giving them a slightly crispy texture while remaining soft and juicy inside. The chanterelles, with their slightly peppery and nutty aroma, are the star of the show. They are sautéed with onions, which gives them an additional sweetness. The cream provides a creamy consistency and combines all the flavors. The grated cheese, which is sprinkled over the potatoes and mushrooms, forms a golden-brown crust that gives the dish an additional dimension of flavor. When preparing in the Thermomix®, it is important not to chop the onions too finely, as they may burn otherwise. 3 seconds on level 5 are ideal. When sautéing the onions and chanterelles, make sure that the temperature is not too high, otherwise the mushrooms may become tough. 120°C or 100°C are perfect. The reverse rotation when simmering the sauce prevents the mushrooms from being crushed. For a vegetarian variant, you can simply replace the cheese with a vegan alternative. If you like it a little spicier, you can add a pinch of chili or some smoked paprika powder. Instead of parsley, you can also use chives or thyme. The oven potatoes are best served with a fresh salad. A green salad with a light vinegar-oil dressing is a perfect match. A lamb's lettuce with bacon cubes is also a delicious side dish. The oven potatoes can be prepared well in advance. The potatoes can be peeled and cut the day before. The sauce can also be prepared and stored in the refrigerator. Before baking, simply place the potatoes in the casserole dish, pour the sauce over them, sprinkle with cheese and slide into the oven. Leftovers can be stored in the refrigerator and reheated the next day. They taste almost even better when the flavors have really blended!
