Description

This turkey zucchini pan is a quick and delicious dish for the summer! The combination of tender turkey, fresh zucchini and sun-ripened tomatoes is simply unbeatable. I especially like to make it when things need to be quick, but I still want something healthy on the table. The dish is ready in less than 35 minutes and tastes great to the whole family. It goes well with a crispy farmhouse bread to soak up the delicious sauce. An absolute favorite recipe of mine!

Ingredients (12 ingredients)

  • 2 piece Turkey escalope
  • 1 piece medium-sized Onion
  • 1 piece Zucchini (approx. 250 g)
  • 2 tsp Oil
  • Salt
  • Pepper
  • Sugar
  • 1 tsp Tomato paste
  • 1 can Tomatoes (425 ml)
  • 3 Stiele Basil
  • 1 tsp Balsamic vinegar
  • 2 Scheiben Farmhouse bread

Preparation (6 steps)

Chop onion

Thermomix® Setting
3 sec/Speed 5

Peel and quarter the onion and place in the mixing bowl. Chop for 3 sec./level 5.

Sauté the onion

Add the oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add zucchini

Thermomix® Setting

Clean and wash the zucchini, cut into cubes and add to the mixing bowl together with the tomato paste. Sauté for 3 min./120°C/level 1.

Add and chop tomatoes

Thermomix® Setting
5 sec/Speed 4

Add the canned tomatoes with juice to the mixing bowl and chop for 5 sec./level 4.

Let it simmer

Thermomix® Setting
5 min/212°F/Speed 1 100

Season with salt, pepper and sugar. Simmer everything for 5 min./100°C/level 1.

Add meat and basil

Thermomix® Setting
2 min/212°F/Linkslauf Speed 1 100 Reverse

Add the meat previously fried in the pan, the chopped basil and the balsamic vinegar to the mixing bowl. Season with salt, pepper and sugar and heat for 2 min./100°C/Reverse rotation level 1.
