Description

A festive and fruity bread, perfect for the winter season.

Ingredients (15 ingredients)

  • 1250 g mixed dried fruits
  • 1 Tasse(n) Nut kernel mixture
  • 1 Stück Lemon
  • 1 Stück Orange
  • 350 g Wheat flour Type 405
  • 1.5 Pck. Baking powder
  • 250 g Sugar
  • 150 g Breadcrumbs
  • 2 Stück Eggs
  • 1 EL Gingerbread spice
  • 2 cl Rum
  • 0.5 Tasse(n) Coffee black
  • 100 g Powdered sugar
  • 1 EL Lemon juice
  • 10 Stück Whole almonds

Preparation (8 steps)

Prepare dried fruits and nuts

Coarsely chop 1.25 kg mixed dried fruits and 1 cup of nut kernel mixture with a knife and place in a bowl.

Grate lemon and orange zest

Grate the zest of 1 lemon and 1 orange with a zester and add to the dried fruits and nuts. Halve the lemon and orange and squeeze out the juice. Add the juice to the dried fruit and nut mixture as well.

Mix flour and baking powder

Put 350 g wheat flour type 405 and 1.5 packets of baking powder into the mixing bowl and mix for 10 sec./speed 4.

Prepare the dough

2 min/Kneading speed

Add 250 g sugar, 150 g breadcrumbs, 2 eggs, 1 tbsp gingerbread spice, 2 cl rum and 0.5 cup of black coffee to the flour in the mixing bowl. Process everything for 2 min./kneading stage to form a dough.

Fold in the dried fruit and nut mixture

30 sec/Linkslauf/Speed 2 Reverse

Add the prepared dried fruit and nut mixture to the mixing bowl and fold in for 30 sec./reverse/speed 2. If necessary, use the spatula to help.

Baking

Grease a loaf pan (approx. 25 cm). Pour the dough into the loaf pan and bake in a preheated oven at 200 degrees top/bottom heat for approx. 1.5 hours. After 45 minutes, cover the cake so that it does not get too dark.

Prepare the glaze

After baking, let the cake cool down. Put 100 g powdered sugar and 1 tbsp lemon juice in the mixing bowl and stir for 20 sec./speed 3.

Decorate

Cover the cooled cake with the glaze and decorate with 10 whole almonds.
