Description

This saffron chicken is a creamy and flavorful dish, perfect for a special dinner or Sunday lunch. The recipe is simple and quick to prepare with the Thermomix®, and the result is a tender and juicy chicken, wrapped in a rich and fragrant saffron sauce. I often prepare it when I have guests, because it is always a success! The combination of chicken, saffron and cream is simply delicious. It goes well with basmati rice or baked potatoes. A real comfort food!

  • Butter
  • Extra virgin olive oil
  • Cream
  • Meat broth
  • Cognac
  • Saffron
  • Parsley
  • White wine
  • Flour
  • Salt

Preparation (5 steps)

Chicken preparation

Cut the chicken into pieces. In a pan, brown the chicken pieces with butter and extra virgin olive oil until golden. Remove the chicken from the pan and set aside.

Preparation of the cooking base

Pour the white wine and cognac into the mixing bowl. Cook for 3 Min./100°C/Stufe 1 without measuring cup to evaporate the alcohol.

Broth addition

15 min/212°F/Speed 2 100

Add the meat broth to the mixing bowl (leaving some aside) and cook for 15 Min./100°C/Stufe 2.

Saffron sauce preparation

Thermomix® Setting
5 min/194°F/Speed 3 90

Add the remaining broth, flour, cream and saffron to the mixing bowl. Cook for 5 Min./90°C/Stufe 3.

Finalization and service

Thermomix® Setting
5 min/194°F/Speed 1/Linkslauf 90 Reverse

Add the chicken pieces to the mixing bowl and cook for another 5 Min./90°C/Stufe 1/Linkslauf. Serve the chicken with its sauce and garnish with chopped parsley.
