Description

This simple dish brings the taste of Italy to the table! Tender chicken breast, coated in a crispy breading and topped with fresh tomatoes and creamy mozzarella – a feast for the senses. I like to make this recipe when I need something quick, but still special. The preparation is straightforward and the result tastes simply delicious. Perfect for a light lunch or a quick dinner with friends. A drizzle of olive oil and fresh oregano round off the dish and give it an authentic touch.

Ingredients (9 ingredients)

  • 4 piece Sliced chicken breast
  • 250 g Cherry tomatoes
  • 125 g Mozzarella
  • 100 g Breadcrumbs
  • 30 g Grated Parmesan cheese
  • 40 g Extra virgin olive oil
  • 1 clove Garlic
  • 1 pinch Salt
  • 1 pinch Oregano

Preparation (6 steps)

Flavored breadcrumbs

Thermomix® Setting
10 Sec./Speed 5

100g Breadcrumbs, 30g Grated Parmesan cheese and a pinch of Salt in the bowl. Mix for 10 Sec./Stage 5. Transfer to a plate.

Bread the chicken

Dip the slices of chicken breast in the flavored breadcrumbs, pressing lightly to make them adhere well. Set aside.

Prepare the cherry tomatoes

250g Cherry tomatoes washed and cut into pieces. 125g Mozzarella cut into slices and dabbed with kitchen paper.

Sauté the garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

40g Extra virgin olive oil and 1 Clove of garlic in the bowl. Sauté for 3 Min./120°C/Stage 1.

Cook the chicken

Arrange the breaded chicken slices in a non-stick pan and sauté well on both sides until golden brown. Remove the garlic.

Complete cooking

10 min/keine/Speed 1

Cover the chicken slices with mozzarella and cherry tomatoes. Add a pinch of oregano and salt. Cook with lid for 10 Min./none/Stage 1.
