Description

This recipe for chicken breast with tapenade is a real treat! The combination of tender chicken, salty pancetta and spicy tapenade is simply irresistible. I like to make this dish when I want to cook something special without spending hours in the kitchen. The tapenade, with its intense aromas of olives, capers and a hint of lemon, goes perfectly with the chicken. The pancetta provides a crispy crust and keeps the meat juicy. A great dish for a leisurely lunch or a festive dinner!

  • Chicken breast
  • Black olives
  • Capers in vinegar
  • Pancetta (stretched)
  • Mint
  • Garlic
  • Lemon zest
  • to taste Extra virgin olive oil (EVO)
  • to taste Salt

Preparation (6 steps)

Prepare tapenade

Black olives, capers in vinegar, mint leaves and clove of garlic in the mixing bowl. Chop for 5 Sec./Speed 5. Add a pinch of salt and lemon zest. Mix for 10 Sec./Speed 3.

Mix tapenade

Add a pinch of salt and lemon zest. Mix for 10 Sec./Speed 3.

Fry chicken breast

Heat some olive oil in a pan. Fry the chicken breast halves in it from both sides until golden brown. Remove from the pan and set aside.

Fill chicken breast

Cut the chicken breast halves with a knife and fill the tapenade into the cuts.

Wrap chicken breast with pancetta

Wrap the filled chicken breast halves with pancetta.

Bake chicken breast

Place the wrapped chicken breast halves on a baking sheet and bake in the preheated oven at 180°C for about 20 minutes, until the chicken is cooked.
