Description

This recipe for pork escalope with beetroot and pickles is a hearty and quick dish that is perfect for everyday life. The combination of sour cream, pickles and beetroot gives the escalopes a special touch. I like to make this dish when I need to be quick and I want something hearty on the table. Preparation with the Thermomix® is very easy and saves time. An ideal dish for the whole family!

  • 1 Stück Onion
  • 80 g Breakfast bacon
  • 2 EL Flour
  • 25 g Porcini mushrooms
  • 200 g Beetroot (glass)
  • 150 g Pickles
  • 150 g Sour cream
  • 0.5 Bund Smooth parsley
  • 800 g Waxy potatoes
  • 8 Stück Pork escalope
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 EL Oil
  • 4 Stück Eggs
  • 1 TL Butter
  • 2 TL Trout caviar

Preparation (10 steps)

Chop onion and bacon

Thermomix® Setting

Peel and quarter the onion. Place in the mixing bowl together with the breakfast bacon and chop for 3 sec./speed 5. Use the spatula to scrape everything down from the edge.

Sauté onion and bacon

Add the oil and sauté for 3 min./120°C/speed 1.

Add flour and porcini mushrooms

Add the flour and porcini mushrooms and sauté for 1 min./100°C/speed 2 with reverse rotation.

Chop beetroot and pickles

Thermomix® Setting
5 sec/Speed 4

Add the beetroot and pickles to the mixing bowl and chop for 5 sec./speed 4.

Prepare sauce

Thermomix® Setting
5 min/194°F/Speed 2 90 Reverse

Add the sour cream, salt and pepper and simmer for 5 min./90°C/speed 2 with reverse rotation.

Chop parsley

Thermomix® Setting

Add the parsley and chop for 3 sec./speed 5.

Cook potatoes

Thermomix® Setting
25 min/Varoma/Speed 1 Varoma

Peel the potatoes, cut into bite-sized pieces and place in the simmering basket. Add 500 ml of water to the mixing bowl, insert the simmering basket and cook for 25 min./Varoma/speed 1.

Fry escalope

Season the pork escalopes with salt and pepper. Heat the oil in a pan and fry the escalopes in it until golden brown on both sides.

Fry eggs

Heat the butter in a pan and fry fried eggs.

Arrange

Distribute the potatoes on plates, pour the sauce over them and arrange the fried escalopes on top. Garnish with a fried egg and trout caviar.
