Description

This recipe for Pork Loin with Plums is a true feast! I especially like to make it in the autumn and winter, when the flavors of plums, herbs and honey are particularly effective. The pork is stuffed with plums and flavored with fresh herbs, which gives it an incomparable aroma. The preparation takes some time, but the result is a juicy and aromatic dish that is perfect for special occasions or a festive dinner. Served with the delicious sauce that forms during roasting, it is an absolute highlight! A touch of honey rounds off the dish perfectly.

Ingredients (13 ingredients)

  • 1 piece Pork loin
  • 2 piece Shallot
  • 1 bunch Thyme
  • 2 foglia Bay leaf
  • 5 foglia Sage
  • 200 g Plums
  • 200 ml Vegetable broth
  • 2 tbsp Honey
  • 3 tbsp Extra virgin olive oil (EVO)
  • 1 pinch Salt
  • 1 pinch Pepper
  • 20 g Butter
  • 1 bunch Rosemary

Preparation (8 steps)

Prepare plums and cut the meat

With a long, sharp knife, cut a deep pocket into the pork loin so that it runs along its entire length. Prepare the plums.

Fill and close the meat

Fill the plums into the pocket of the pork loin. Close the meat with kitchen string, add salt, pepper and massage in well everywhere.

Chop the shallots

Thermomix® Setting

Peel the shallots, place them in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Fry the meat

Heat a small amount of butter and olive oil in a pan. Brown the pork loin well on all sides, including the ends, together with sage, bay leaf, thyme and rosemary. Add the chopped shallots and some extra plums.

Roast in the oven

When the roasting juices have almost completely evaporated, roast the pork loin in a baking dish in a preheated oven at 200°C (top/bottom heat) for approx. 40-45 minutes.

Let the meat rest

After roasting, remove the pork loin from the oven and, as soon as it is lukewarm, wrap it in aluminum foil and let it rest.

Prepare the sauce

Deglaze the roasting juices in the pan with honey. Remove the herbs and let the sauce reduce until it is glazed.

Slice and serve the meat

Remove the pork loin from the aluminum foil, remove the kitchen string and slice the meat. Serve with the sauce.
