Description

This stuffed chicken is a dish that I often prepare when I have guests for dinner. The filling of sausage, ham and vegetables makes it particularly tasty and the mixed rice that accompanies it is a real touch of class. The preparation takes a little time, but the result is guaranteed! Perfect for a family dinner or a special occasion. Cumin and jalapeno pepper add a spicy touch that goes very well with the sweetness of the peppers. A rich and tasty dish that will conquer everyone!

Ingredients (20 ingredients)

  • 4 piece Chicken
  • Pork sausage
  • Cooked ham
  • Yellow peppers
  • Red peppers
  • Celery
  • White sliced bread
  • 1 piece Eggs
  • Garlic powder
  • Shallot
  • Cumin
  • Jalapeno peppers
  • Paprika
  • Butter
  • Extra virgin olive oil (EVO)
  • Salt
  • White pepper
  • Basmati rice
  • Red rice
  • Wild rice

Preparation (9 steps)

Rice preparation

Gather the basmati rice, red rice and wild rice in a saucepan. Spread the rice well in an even layer and cover with water equal to twice the volume of the rice. Add a pinch of salt. Close the saucepan and let it cook over low heat until absorbed. This step is not performed in the Thermomix.

Brown the sausage and ham

Take the sausage, remove the casing, cut it into coarse pieces. In a non-stick pan, without any seasoning, brown the sausage. Add the diced cooked ham and let it brown as well. This step is not performed in the Thermomix.

Chop celery and peppers

Insert the celery (without the leaves) and the peppers (roughly cut) into the bowl. Chop for 5 Sec./Stufe 5.

Cook the filling

Add the chopped celery and peppers, together with the diced white sliced bread, to the pan with the sausage and ham. Mix and let it cook for a few minutes so that the filling is flavored. Turn off and let cool. This step is not performed in the Thermomix.

Prepare the chicken

Clean the chicken from feathers and fluff by flaming it. Remove the tip of the wings, the tail and excess fat. Detach the skin from the pulp at the breast and insert some small pieces of butter which you will distribute well by massaging the chicken. This step is not performed in the Thermomix.

Prepare the filling

Transfer the sausage mixture to a large bowl. Add two pinches of white pepper, ground cumin, sweet paprika, jalapeno or chilli pepper to taste, garlic powder and dried shallot. Adjust the salt, considering the flavor of the sausage. Add a whole egg and mix everything together. This step is not performed in the Thermomix.

Stuff the chicken

Stuff the chicken with the prepared mixture. Close the opening with two toothpicks to prevent the filling from escaping during cooking. Tie the chicken with kitchen twine so that it remains in shape during cooking. This step is not performed in the Thermomix.

Cook the chicken in the oven

Salt the surface of the chicken and arrange it in a baking dish greased with extra virgin olive oil. Put in the oven at 180°C for about an hour. Check the chicken for doneness by cutting it with the tip of a knife, if clear serum comes out, the chicken is cooked to perfection. This step is not performed in the Thermomix.

Serve

Serve the chicken in pieces with all its filling, accompanying it with the mixed rice and drizzling it with the cooking oil. This step is not performed in the Thermomix.
