Description

This dish is a tribute to the classic Chicken alla Marengo, but with a little twist that makes it perfect for the Thermomix®. I like to make it when I invite friends for dinner because it is easy to prepare and always goes down well. The chicken is wonderfully tender and juicy, the prawns add a fine sea note and the mushrooms provide an earthy taste. Served with crusty bread and a fried egg, it is a real feast! A few splashes of lemon round off the dish perfectly. Ideal for a cozy dinner with friends or family.

Ingredients (13 ingredients)

  • 4 piece Chicken
  • 200 g Prawn tails
  • 250 g Button mushrooms
  • 500 g Tomato pulp
  • 100 ml White wine
  • 1 clove Garlic
  • 1 bunch Parsley
  • 50 ml Extra virgin olive oil
  • 0.5 piece Lemon
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 4 piece Eggs
  • 4 slice Bread

Preparation (11 steps)

Prepare prawns

Clean the prawns and remove the intestines. Either use only the tails or the whole prawns. Set aside the prawns.

Prepare Button mushrooms

Clean the button mushrooms, remove the skin and slice them. Set aside the sliced mushrooms.

Chop parsley

Thermomix® Setting
5 sec/Speed 7

Wash the fresh parsley, shake it dry and put it in the mixing bowl. Chop for 5 sec./speed 7. Set aside.

Chop and sauté garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Peel the garlic, put it in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula. Add 30 ml extra virgin olive oil and sauté for 3 min./120°C/speed 1.

Fry chicken

In a separate pot or pan, fry the chicken with some extra virgin olive oil until it has browned on all sides. Set aside.

Add Tomato pulp

5 min/212°F/Linkslauf Speed 1 100 Reverse

Put the fried chicken pieces in the mixing bowl. Add 500 g Tomato pulp, salt and pepper. Cook for 5 min./100°C/reverse rotation speed 1.

Add Button mushrooms and simmer

Thermomix® Setting
40 min/212°F/Linkslauf Speed 1 100 Reverse

Add the sliced mushrooms to the mixing bowl and simmer for 40 min./100°C/reverse rotation speed 1. Add some water if needed.

Fry prawns

In a separate pan, heat some extra virgin olive oil and briefly fry the prawns in it until they are pink. Season with salt and pepper.

Toast bread

In a separate pan, toast the slices of bread with some extra virgin olive oil on both sides until golden brown.

Fry eggs

Fry the eggs in the same pan so that the yolk is still soft. Season with salt.

Serve

Arrange the chicken with the sauce on plates. Add the fried prawns, the toasted slices of bread and the fried eggs. Sprinkle with chopped parsley and drizzle with lemon juice to taste.
