Description

This Andalusian gazpacho is a perfect recipe for hot summer days. Refreshing, light and full of flavor, it is ideal as a starter or even as a light meal. The recipe is very simple and quick to prepare with the Thermomix®, making it an ideal option for those looking for a healthy and delicious meal without complications. Gazpacho is a traditional cold soup from Andalusia, made with fresh vegetables such as tomatoes, cucumber, pepper and onion, seasoned with olive oil and vinegar. An explosion of Mediterranean flavor in every sip! It can be stored in the refrigerator to enjoy it very cold.

Ingredients (10 ingredients)

  • 1 piece cucumber melon
  • 5 piece pear tomatoes
  • 1 piece cucumber
  • 0.5 piece spring onion
  • 3 piece young garlic
  • 1 tbsp vinegar
  • 1 chorro olive oil
  • 0.5 piece red pepper
  • 1 pinch salt
  • 1 pinch pepper

Preparation (3 steps)

Blend the vegetables

Thermomix® Setting
1 min/Velocidad Máxima, 5 min/Velocidad 5

Wash and cut into pieces 1 cucumber melon, 5 pear tomatoes, 1 cucumber, 1/2 spring onion, 3 young garlic and 1/2 red pepper. Put all the vegetables in the Thermomix glass. Add 1 tablespoon of vinegar, a splash of olive oil, salt and pepper to taste. Blend for 1 minute/maximum speed. Then, blend for 5 minutes/speed 5.

Cool and blend again

Thermomix® Setting
1 min/Velocidad Máxima, 4 min/Velocidad 5

Add 4 or 5 ice cubes to the Thermomix glass. Blend again for 1 minute/maximum speed. Then, blend for 4 or 5 minutes/speed 5.

Serve and enjoy

Serve immediately or store in the refrigerator to enjoy it very cold.
