About this recipe

This apple, pineapple and walnut salad reminds me of Christmas at my grandmother's house. It was a fixed dish on the table, always present next to the turkey and ham. Although she prepared it by hand, without Thermomix®, the flavor was unmistakable. I have adapted her recipe to my Thermomix® to simplify the process, but maintaining the essence and flavor that I like so much. The yellow apple is the base of this salad. Its mild sweetness and crunchy texture contrast wonderfully with the acidity of the pineapple. It is important to use good quality apples, firm and juicy. The pineapple in syrup provides a tropical touch and a more intense sweetness. Make sure to drain it well so that the salad does not become too liquid. The walnuts, for their part, offer a crunchy counterpoint and a slightly bitter flavor that balances the sweetness of the rest of the ingredients. For preparation, the Thermomix® is a great ally, especially for the cream. The mixture of sour cream and condensed milk should be smooth and homogeneous. It is important not to exceed the mixing time to prevent the cream from curdling. If you don't have a Thermomix®, you can use a wire mixer or even mix by hand with a spatula. Remember that the key is in the smoothness. Once you have the cream ready, carefully incorporate the rest of the ingredients. Do not use the Thermomix® for this, as you could undo the apple and pineapple. The ideal is to use a spatula and mix gently until all the ingredients are well integrated. If you want to give a different touch to your salad, you can add raisins soaked in rum or candied cherries. For a lighter version, you can substitute sour cream for natural Greek yogurt. If you prefer a vegan option, you can use coconut cream instead of sour cream and vegan condensed milk. This salad is perfect as an accompaniment to cold meats, poultry or even fish. You can also serve it as a light dessert. For a more elegant presentation, you can serve it in individual cups or in a glass bowl. The salad keeps well in the refrigerator for a couple of days. It is important to store it in an airtight container so that it does not dry out. You can prepare it in advance and let it cool in the refrigerator before serving. In fact, the flavor improves over time, as the ingredients mix and integrate better.
