  • 250 g Onions
  • 200 g Apples
  • 100 g Celery
  • 100 ml Apple juice
  • 1 tsp Mustard
  • 1 tsp Marjoram

  • 100 g Bread rolls from the previous day
  • 1 piece Egg
  • 40 g Oil
  • 200 ml Vegetable broth
  • 1 tbsp Soy sauce
  • Cornstarch

Prepare onions and garlic

Put 250g onions into the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Put 200g apples (peeled, cored and diced) and 100g celery (diced) into the mixing bowl and chop for 3 sec./level 4. Push down with the spatula.

Soak bread rolls

Cut 100g bread rolls from the previous day into small pieces and soak in some water.

My grandma, a master of hearty cuisine, often prepared it, especially in the fall when the apples were ripe and the smell of marjoram wafted through the house. Her recipe was of course secret, but I have tried to recreate it as best as possible, with the help of the Thermomix®, which significantly simplifies the preparation. The pork belly itself is the heart of this dish. It should be of good quality, with a nice layer of fat that becomes crispy when roasted and gives the meat an intense flavor. The filling of apples and onions provides a wonderful balance. The sweetness of the apples, preferably sour varieties such as Boskop or Elstar, harmonizes perfectly with the spice of the onions. The celery contributes a slightly earthy note and gives the filling structure. Apple juice not only serves as a liquid, but also enhances the aroma of the apples. Marjoram is the traditional spice for pork and should not be missing in this recipe. The soaked bread rolls and the egg bind the filling and make it juicy. When preparing in the Thermomix®, it is important not to chop the onions too finely, as they can burn when sautéing. Chop the apples and celery only briefly so that they still have a bite. When filling the pork belly, be sure to press the filling well into the incisions so that it does not fall out during roasting. Searing in the pan is important to create roasted flavors and seal the crust. In the Thermomix®, the pork belly then cooks gently in the broth, making it particularly tender. Thickening the sauce at the end with cornstarch is optional, but it gives it a nice consistency.
