Description

This hearty liver pan dish is a savory main course that is quick and easy to prepare in the Thermomix®. The liver is first fried in the pan and then braised with onions, garlic, red wine and spices in the Thermomix®. Ideal for a quick lunch or dinner, especially in the colder months. The dish is rich in protein and iron and is well suited for lovers of traditional cuisine. The preparation time is about 35 minutes and is sufficient for 4 servings.

Ingredients (15 ingredients)

  • 500 g Liver
  • 2 piece Onions
  • 2 piece Garlic cloves
  • 40 g Clarified butter
  • 1 tbsp Medium-hot mustard
  • 1 tbsp Marjoram
  • 1 tsp Thyme
  • 1 tsp Sweet paprika powder
  • 0.5 tsp Caraway
  • 1 pinch Nutmeg
  • 100 ml Dry red wine
  • 100 ml Vegetable broth
  • 0.5 tsp Salt
  • 0.25 tsp Pepper
  • 1 tbsp Cornstarch

Preparation (7 steps)

Chop onions and garlic

Add 2 onions, peeled and quartered, and 2 cloves of garlic to the mixing bowl and chop for 3 sec./speed 5.

Sauté onions and garlic

Add 40 g of clarified butter to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare liver

Cut 500 g of liver into bite-sized pieces. Fry the meat in a separate pan with some clarified butter until it has taken on color.

Add liver and remaining ingredients

Add the fried liver, 1 tbsp medium-hot mustard, 1 tbsp marjoram, 1 tsp thyme, 1 tsp sweet paprika powder, 1/2 tsp caraway, 1 pinch of nutmeg, 100 ml dry red wine, 100 ml vegetable broth, 1/2 tsp salt and 1/4 tsp pepper to the onions and garlic in the mixing bowl.

Let the liver pan simmer

Close the mixing bowl and let the liver pan simmer for 15 min./100°C/reverse/speed 1. Leave the measuring cup on.

Thicken the sauce

Mix 1 tbsp cornstarch with a little cold water and add to the mixing bowl. Simmer for another 2 min./100°C/speed 2 without reverse to thicken the sauce.

Season the liver pan with salt and pepper and serve.
