Description

This rustic farmhouse chicken with potatoes is a hearty and filling dish that is perfect for cozy autumn evenings. I like to make it when the days get shorter and you need something warming. The chicken becomes wonderfully tender and the potatoes absorb the flavor of the broth and bacon. An absolute favorite dish that requires few ingredients and simmers in the oven. Ideal for the whole family and can be prepared very well. Simply tastes delicious!

Ingredients (9 ingredients)

  • 1 piece Chicken, large
  • 50 g Margarine
  • 250 g Onion(s)
  • 1 kg Potato(es)
  • 100 g Bacon, streaky
  • 0.25 Liter Meat broth
  • 1 tsp Paprika powder, hot
  • to taste Salt
  • to taste Pepper

Prepare onions and bacon

Thermomix® Setting

Put 250 g onions in the mixing bowl and chop for 3 sec./speed 5. Add 100 g bacon cubes and sauté for 3 min./120°C/speed 1.

Prepare potatoes

Peel, wash and dice 1 kg potatoes into approx. 2 cm cubes. Add the potato cubes to the onions and bacon in the mixing bowl.

Add meat broth

Thermomix® Setting

Add 0.25 liters of meat broth, 1 tsp of hot paprika powder, salt and pepper to the mixing bowl and mix for 5 sec./speed 3.

Fry chicken

Heat 50 g margarine in a pan. Fry the chicken on all sides for about 10 minutes. Season with salt, pepper and paprika. Fry for another 10 minutes, turning 1-2 times.

Mix chicken and vegetables

Place the fried chicken in a roasting pan and pour the potato-onion-bacon mixture from the mixing bowl over it.

Simmer in the oven

Cover the roasting pan and place it in the preheated oven at 200°C on the middle rack. After 40 minutes, remove the lid and let the chicken brown for another 20 minutes.

This recipe for rustic farmhouse chicken with potatoes is a dish that has a long tradition in our family. My grandma always prepared it in a cast-iron pot on the stove, and the smell that wafted through the house is one of my fondest childhood memories. I have adapted the recipe somewhat over the years to make it easier to prepare with the Thermomix®, but the original, hearty taste has remained. The ingredients are deliberately kept simple, but each one contributes to the overall result. The chicken, preferably a free-range chicken, is of course the star of the dish. It provides the juicy, aromatic meat. The margarine ensures a nice browning and a slightly buttery taste. The onions form the basis for the sauce and add sweetness and spice. The potatoes, ideally waxy varieties, soak up the broth and become wonderfully soft without falling apart. The streaky bacon provides a smoky note and additional spice. The meat broth serves as the basis for the sauce and keeps everything juicy. Paprika powder, salt and pepper round off the dish and give it the necessary spice. The preparation with the Thermomix® is very simple. First, the onions and bacon are chopped and sautéed. This saves time and ensures an even base. Then the potatoes are added and mixed with the broth and spices. The Thermomix® takes over the stirring here, so that nothing burns. Meanwhile, the chicken is browned in a pan. Browning is important to create roasted flavors and keep the meat juicy. After browning, the chicken is placed in a roasting pan and covered with the potato-onion-bacon mixture. Then the roasting pan goes into the oven, where the chicken and potatoes slowly simmer and all the flavors combine. For a vegetarian version, you can replace the chicken with large, firm-boiling tofu cubes or Halloumi. The bacon can be replaced with smoked tofu or smoked tofu cubes. Vegetable broth can be used instead of meat broth. If you like it a little spicier, you can add a pinch of chili powder or a few chopped chili peppers. Fresh herbs such as rosemary, thyme or sage also go perfectly with this dish. The farmhouse chicken is best served directly from the roasting pan. A fresh salad goes well with this, for example a green salad with vinegar and oil or a coleslaw. A dollop of sour cream or yogurt also tastes good with it. If you like, you can also serve some fresh bread to soak up the delicious sauce. Leftovers of the farmhouse chicken can easily be stored in the refrigerator. They still taste very good the next day, reheated in the microwave or in the oven. You can also prepare the dish well in advance. The potato-onion-bacon mixture can be prepared the day before and stored in the refrigerator. The chicken can also be browned and then placed in the roasting pan together with the potato mixture. This saves time the next day and you still have a delicious, home-cooked meal on the table.
