Description

This rustic lamb and potato pie is a perfect comfort food for autumn or winter evenings. The lamb meat, tender and flavorful, goes perfectly with the creaminess of the mashed potatoes. A substantial and flavorful one-dish meal, ideal for a family dinner or Sunday lunch. Preparation is simple and with the Thermomix® it becomes even faster. A great idea to use leftover roast lamb, turning it into a delight. Perfect to serve hot and steaming, perhaps accompanied by a side of fresh vegetables.

  • Potatoes
  • Egg yolk
  • Cream
  • Onions
  • Garlic
  • Carrots
  • Worcestershire sauce
  • Extra virgin olive oil (EVO)
  • to taste Tomato concentrate
  • Thyme
  • Rosemary
  • to taste Black pepper
  • to taste Salt
  • 1 l Broth

Chop onions and carrots

Insert the peeled and quartered onions and the sliced carrots into the bowl. Chop for 3 Sec./Stage 5.

Sauté the vegetables

Add the extra virgin olive oil and sauté for 3 Min./120°C/Stage 1.

Brown the lamb

In a separate pan, brown the ground lamb pulp with a clove of finely chopped garlic until it changes color.

Add the lamb to the sauté

10 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the browned lamb to the bowl, along with the tomato paste, Worcestershire sauce, thyme and rosemary. Cook for 10 Min./100°C/Stage 1/Reverse.

Add broth and thicken

25 min/212°F/Speed 1/Linkslauf 100 Reverse

Add one liter of broth, salt and pepper. Cook for 25 Min./100°C/Stage 1/Reverse.

Prepare the mashed potatoes

Meanwhile, boil the potatoes in boiling salted water until tender. Drain and mash them in the potato masher.

Mix the mashed potatoes

Insert the mashed potatoes into the bowl. Add the egg yolks, cream, salt and pepper. Mix for 20 Sec./Stage 3.

Assemble the pie

Pour the lamb ragout into a baking dish and cover with an even layer of mashed potatoes.

Bake at 180°C for about 20 minutes, or until the surface is golden brown.
