Description

This Quinoa Zucchini Salad is an absolute highlight for warm days! The combination of nutty quinoa, fresh zucchini and creamy goat cheese is simply unbeatable. I love how quick and easy this salad is to prepare - perfect when you need something quick. The roasted hazelnuts provide a great crunch and the basil a fresh note. A great dish that is also great to prepare and therefore ideal for a picnic or a light dinner. Try it, you will be thrilled!

Ingredients (9 ingredients)

  • 150 g Quinoa
  • 500 g Zucchini
  • 75 g Hazelnuts, peeled
  • 5 tbsp Olive oil
  • 2 piece Tomatoes
  • 1 piece Onion, red
  • 1 bunch Basil
  • 3 tbsp Balsamic vinegar, light
  • 100 g Goat cream cheese

Preparation (8 steps)

Cook Quinoa

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 150 g quinoa to the mixing bowl and cover with plenty of salted water. Cook for 15 Min./100°C/Stufe 1.

Pour off Quinoa

Pour the quinoa through the simmering basket and let it drain.

Roast Hazelnuts

Thermomix® Setting
2 min/248°F/Speed 1 120

Add 75 g hazelnuts and 1 tbsp olive oil to the mixing bowl. Roast for 2 Min./120°C/Stufe 1. Then remove from the mixing bowl and let cool.

Prepare Zucchini

Process 500 g zucchini into spaghetti with a spiral cutter and set aside.

Prepare Tomatoes and Onions

Dice 2 tomatoes and cut 1 red onion into strips. Pluck 1 bunch of basil leaves.

Mix Salad

Put zucchini spaghetti, diced tomatoes, onion strips and cooled quinoa in a bowl. Add 3 tbsp light balsamic vinegar and 4 tbsp olive oil. Season with salt and pepper and mix well.

Fold in Basil

Carefully fold the plucked basil leaves into the salad.

Arrange and Garnish

Arrange the salad on plates. Roughly crush the roasted hazelnuts and crumble 100 g of goat cream cheese. Sprinkle both over the salad and serve.
