Description

This salmon in puff pastry with spinach is a recipe that I often prepare for a special dinner or a festive lunch. The combination of juicy salmon with the creaminess of the spinach and the crispness of the puff pastry is simply delicious. It is a relatively quick dish to make, perfect for when you want to impress without spending hours in the kitchen. In addition, it can be prepared in advance and baked just before serving. A guaranteed success for any occasion!

Ingredients (9 ingredients)

  • 2 trozos salmon
  • 1 pack spinach
  • 100 ml cooking cream
  • 20 gramos grated cheese
  • 1 lámina rectangular puff pastry
  • 1 pinch salt
  • 1 pinch pepper
  • 1 piece egg
  • 1 chorro olive oil

Preparation (7 steps)

Wash and prepare the spinach

Wash 1 package of fresh spinach. If the leaves are large, cut them into smaller pieces. Set aside.

Sauté the spinach

Thermomix® Setting
5 min/248°F/Giro a la izquierda/Velocidad cuchara 120 Reverse

Add a splash of olive oil to the Thermomix glass. Incorporate the washed spinach and program 5 Min./120°C/Turn to the left/Spoon speed.

Add cream and cheese

Thermomix® Setting
3 min/194°F/Giro a la izquierda/Velocidad cuchara 90 Reverse

Add 100 ml of cooking cream, 20 grams of grated cheese, 1 pinch of salt and 1 pinch of pepper to the glass. Program 3 Min./90°C/Turn to the left/Spoon speed.

Prepare the salmon

Cut 2 pieces of salmon into individual portions. Remove the skin and bones if there are any. Season with salt and pepper to taste.

Assemble the puff pastry

Spread 1 sheet of rectangular puff pastry and cut 2 rectangles. Place a piece of salmon in the center of each rectangle. Cover the salmon with the creamed spinach.

Close and paint the puff pastry

Close the puff pastry packages, sealing the edges well with your fingers. Beat 1 egg and brush the surface of the puff pastry.

Bake the salmon in puff pastry

Preheat the oven to 180°C. Bake the salmon in puff pastry for 15-20 minutes, or until golden brown.
