Description

Chicken scaloppine with rosemary, a classic of Italian cuisine, revisited with our trusty Thermomix®. This simple and tasty dish is perfect for a quick and flavorful dinner. The slices of chicken, floured and browned, are enriched with the intense aroma of rosemary and the freshness of white wine. I often prepare it when I have little time but don't want to give up a dish full of flavor. The meat remains tender and juicy, and the sauce is perfect to accompany a side of fresh vegetables or mashed potatoes. A true comfort food, ideal for the whole family!

Ingredients (10 ingredients)

  • 600 g sliced chicken breast
  • flour
  • 2 clove garlic
  • 0.5 bicchiere white wine
  • rosemary
  • parsley
  • butter
  • olive oil
  • pepper
  • fine salt

Preparation of the ingredients

Put a little flour on a plate and bread the chicken breast slices, then put them on another plate and set aside. Finely chop the garlic cloves, rosemary and parsley.

Sauté garlic, rosemary and parsley

Put a little butter and a drizzle of olive oil in the bowl. Add the chopped garlic, rosemary and parsley and sauté: 3 Min./120°C/Stufe 1.

Cooking the chicken

Add the breaded chicken slices to the bowl, salt and pepper. Cook: 10 Min./100°C/Stufe 1/Linkslauf.

Deglaze with white wine

Thermomix® Setting
10 min/212°F/Speed 1/Linkslauf 100 Reverse

Pour the white wine into the bowl and cook: 10 Min./100°C/Stufe 1/Linkslauf, turning the slices occasionally with the spatula.

Serve

Transfer the chicken breast to a serving dish and pour the cooking juices over it. Serve hot.
