Description

This dish is a true classic of Italian cuisine! The strozzapreti, a traditional pasta shape, harmonize perfectly with the fresh mussels. A touch of garlic, fresh parsley and a splash of extra virgin olive oil round off the taste experience. The preparation is simple and quick, ideal for a light lunch or a cozy dinner with friends.   • 320 Dosi Fresh or homemade pasta
  • 1000 null Mussels
  • 3 null Extra virgin olive oil
  • 1 null Fine salt
  • 1 null Pepper
  • 2 null Garlic
  • 30 null Parsley

Preparation (9 steps)

Prepare mussels

Thoroughly clean fresh mussels (quantity as needed) under running water and remove beards. Discard any damaged or already opened mussels.

Steam mussels

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Place the cleaned mussels in the Varoma container. Pour 500 ml of water into the mixing bowl, place the Varoma on top and steam for 15 min./Varoma/speed 1 until the mussels have opened. Discard any unopened mussels.

Prepare mussels

Let the cooked mussels cool slightly. Remove 3/4 of the mussels from their shells and set aside. Save the remaining mussels in their shells for decoration.

Chop garlic and parsley

Thermomix® Setting

Put 1-2 cloves of garlic (depending on taste) and a bunch of parsley into the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare sauce

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 3 tablespoons of extra virgin olive oil to the mixing bowl and sauté for 3 min./120°C/speed 1.

Add mussels

Thermomix® Setting
2 min/212°F/Linkslauf Speed 1 100 Reverse

Add the shelled mussels, the mussels in their shells, salt and pepper to taste to the mixing bowl and heat for 2 min./100°C/reverse speed 1.

Cook pasta

In a separate pot, bring enough water to a boil, salt it and cook the strozzapreti (amount according to package instructions) in it according to package instructions until al dente.

Mix pasta and sauce

Add the drained pasta to the mussel sauce in the mixing bowl and mix for 1 min./100°C/reverse speed 1.

Strozzapreti with Seafood are a dish that immediately evokes the scent of the sea and the culinary traditions of the Italian coasts. My grandmother, originally from a small seaside village in Romagna, often prepared this dish, using fresh homemade pasta and freshly caught seafood. The memory of that authentic flavor is always alive in my memory and I try to reproduce it every time I prepare this recipe. The base of this dish is pasta, strozzapreti precisely. Their elongated and slightly curled shape allows them to better collect the sauce, enhancing the flavor of the seafood. If you don't have time to prepare fresh pasta, you can use dried pasta, but you will feel the difference. Mussels are the undisputed protagonists of the dressing. They must be very fresh, with an intense smell of the sea. Their flesh, firm and tasty, goes perfectly with garlic, whose pungent note is balanced by the sweetness of fresh parsley. Extra virgin olive oil, strictly of high quality, binds all the ingredients, giving the dish a rich and enveloping flavor. The use of the Thermomix® greatly simplifies the preparation of this dish. Steaming the mussels in the Varoma allows you to best preserve their flavor and consistency. The chopping of garlic and parsley in the bowl is quick and uniform, guaranteeing a perfect result. During preparation, it is important to pay attention to the temperature and cooking times, to prevent the mussels from becoming too hard. A tip: don't hesitate to add a pinch of chili pepper if you love spicy flavors. For a vegetarian or vegan variant, the mussels can be replaced with button or porcini mushrooms, cut into pieces. In this case, it is advisable to add a little vegetable broth to make the sauce creamier. Other variations include the addition of fresh cherry tomatoes, cut in half, or Taggiasca olives, for an extra touch of flavor. Strozzapreti with Seafood are served hot, garnished with a sprig of fresh parsley and a sprinkling of freshly ground black pepper. They can be accompanied by a glass of dry and fruity white wine, such as a Vermentino di Sardegna or a Falanghina del Sannio. A mixed salad with seasonal vegetables is the ideal side dish for this dish. If there are any leftovers, the Strozzapreti with Seafood can be stored in the refrigerator for a maximum of one day, in an airtight container. Before serving, it is advisable to heat them in a pan with a drizzle of oil and a little pasta cooking water. Alternatively, you can prepare the mussels and the sauce in advance, keeping them separate from the pasta. When serving, just cook the pasta and season it with the reheated sauce.
