Description

This savoury cake with courgettes and ham is a great solution for a quick lunch or a delicious appetiser. The combination of fresh courgettes, flavourful ham and stringy cheese makes it irresistible. I often prepare it when I have unexpected guests, because it is simple and quick to make with the Thermomix®. Its soft consistency and balanced taste make it suitable for all palates. Perfect to enjoy warm or cold, it is also ideal for an outdoor picnic. Try it, you won't regret it!

Ingredients (12 ingredients)

  • 200 g courgettes
  • 3 piece eggs
  • 2 cucchiaini fine salt
  • 1 tsp sugar
  • 40 g grated Parmesan cheese
  • 150 g milk
  • 120 g sunflower seed oil
  • 50 g potato starch
  • 250 g flour 00
  • 15 g instant baking powder for savoury cakes
  • 100 g diced cooked ham
  • 100 g diced Emmental

Grate the courgettes

Insert the courgettes into the bowl and grate for 5 Sec./Stufe 5.

Prepare the mixture

In a large bowl, break the eggs and add the fine salt, sugar and grated Parmesan cheese. Mix well with a hand whisk.

Add the liquid ingredients

Add the sunflower seed oil and potato starch to the egg mixture. Mix with a hand whisk until you get a smooth mixture.

Incorporate the flours and baking powder

Add the flour 00 and the instant baking powder for savoury cakes to the mixture. Mix gently with a spatula to avoid deflating the mixture.

Add courgettes, ham and cheese

Add the grated courgettes, the diced cooked ham and the diced Emmental to the mixture. Mix gently with a spatula to distribute the ingredients evenly.

Pour into the mould and bake

Pour the mixture into a cake tin previously greased and floured. Bake in a preheated oven at 180°C for about 30 minutes, or until golden brown.

The diced cooked ham adds a touch of salty and smoky flavour, which goes perfectly with the sweetness of the courgettes. The emmental, with its slightly nutty taste, gives the cake a stringy and delicious note. The grated Parmesan cheese, added to the dough, helps to enhance the overall flavour and give it a richer consistency. To prepare this cake with the Thermomix®, it is essential to follow the steps carefully. Start by grating the courgettes in the bowl: a few seconds at speed 5 will be enough to obtain a perfect consistency. Then, prepare the dough in a bowl, mixing the liquid ingredients with the dry ones. It is important not to overwork the dough, to prevent it from becoming rubbery. Finally, add the grated courgettes, the ham and the emmental, mixing gently to distribute the ingredients evenly. Pour the mixture into a greased and floured mould and bake in a preheated oven at 180°C for about 30 minutes, or until golden brown. For a vegetarian version, you can replace the ham with other ingredients, such as button mushrooms sautéed in a pan, pitted black olives or sun-dried tomatoes in oil. For a vegan version, you can use vegetable milk (such as soy or almond milk) and replace the eggs with a mixture of chickpea flour and water. You can also add spices and aromatic herbs to personalise the flavour of the cake: a pinch of nutmeg, a little oregano or chopped fresh basil are perfect to enhance the taste of the courgettes.
