Description

This marzipan-apple cake from the Thermomix® is an autumnal baking recipe with marzipan bread, apples and almonds. The cake is ideal for coffee time or as a dessert.   • 150 g Marzipan bread
  • 1 Stk. Apple
  • 175 g Margarine
  • 150 g Brown sugar
  • 2 Stk. Eggs
  • 200 g Flour
  • 100 g Ground almonds
  • 1 tsp Cardamom ground
  • 2 tsp Baking powder
  • 1 pinch Iodized salt
  • 100 ml Almond milk

Preparation (8 steps)

Chop marzipan

Put 150 g marzipan bread (with chocolate or according to your taste) into the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Prepare apple

Wash, quarter and core 1 apple (approx. 150 g). Put apple pieces in the mixing bowl and chop for 4 sec./speed 4. Transfer and set aside.

Stir margarine and sugar

Put 175 g margarine (at room temperature) and 150 g brown sugar in the mixing bowl and stir for 30 sec./speed 4.

Add eggs

Add 2 eggs individually one after the other to the mixing bowl and stir in each for 15 sec./speed 3.

Mix dry ingredients

Put 200 g flour, 100 g ground almonds, 1 tsp cardamom ground, 2 tsp baking powder and 1 pinch iodized salt in the mixing bowl and mix for 15 sec./speed 3.

Mix dry and liquid ingredients

Add the flour mixture and 100 ml almond milk alternately in 2 portions to the mixing bowl and stir in for 20 sec./speed 3. Use a spatula to loosen everything from the edge.

Fold in apple and marzipan

Add the chopped apple and the chopped marzipan to the mixing bowl and stir in for 10 sec./reverse rotation speed 2. Use a spatula to loosen everything from the edge.

Baking

Fill the dough into a prepared springform pan (lined with baking paper or greased) and bake in a preheated oven at 180 °C (convection oven: 160 °C) for approx. 50-55 minutes. Do a stick test, no liquid dough should stick to the wooden stick. Let the marzipan cake cool for about 15 minutes and remove from the mold. Let cool completely and dust with icing sugar as desired.
