Description

This curd cake with apple sauce and crispy crumbles is a real classic that I always enjoy baking. The dough is super quick to prepare in the Thermomix® and the result is a juicy, fruity cake that everyone simply loves. I particularly like the combination of the tart apple sauce and the sweet crumbles. Perfect for Sunday coffee or as a gift for brunch. If you like, you can add a few raisins or chopped nuts to the dough. An absolute favorite recipe!

Ingredients (15 ingredients)

  • 1 piece Egg(s)
  • 100 g Sugar
  • 1 Pck. Vanilla sugar
  • 200 g Curd
  • 6 tbsp Milk
  • 8 tbsp Oil
  • 400 g Flour
  • 1 Pck. Baking powder
  • 2 tsp Baking powder
  • 500 g Apple sauce
  • 2 tsp Cinnamon
  • 300 g Flour
  • 150 g Sugar
  • 1 Pck. Vanilla sugar
  • 150 g Margarine

Prepare curd-oil dough

Thermomix® Setting
2 min/Kneading speed

Put 1 Egg, 100 g Sugar and 1 Pck. Vanilla sugar into the mixing bowl and mix for 20 sec/speed 4. Add 200 g Curd, 6 tbsp Milk and 8 tbsp Oil and stir in for 10 sec/speed 3. Add 400 g Flour and 1 Pck. Baking powder and 2 tsp Baking powder and process into a dough for 2 min/kneading stage.

Spread dough on baking tray

Spread the dough on a baking tray lined with baking paper. Spread 500 g Apple sauce on top and sprinkle with 2 tsp Cinnamon.

Prepare crumbles

Thermomix® Setting
30 sec/Speed 4

Put 300 g Flour, 150 g Sugar and 1 Pck. Vanilla sugar into the mixing bowl and mix for 10 sec/speed 4. Add 150 g Margarine in pieces and process into crumbles for 30 sec/speed 4.

Spread crumbles and bake

Spread the crumbles on the apple sauce. Place the baking tray in the preheated oven and bake for approx. 30 minutes at 180°C top/bottom heat.

This curd cake with apple sauce and crumbles is a piece of my childhood for me. My grandma always baked it, and the scent of cinnamon and apples that wafted through the house is one of my fondest memories. I have adapted her recipe slightly over the years to make it even easier with the Thermomix®, but the basic taste has remained the same. The secret of this cake lies in the combination of different textures and flavors. The curd-oil dough is wonderfully juicy and forms the perfect base for the fruity filling. The curd provides a slight acidity and a pleasant moisture, while the oil makes the dough smooth. The apple sauce brings a natural sweetness and a slightly tart note, which is wonderfully complemented by the cinnamon. Finally, the crumbles provide the crispy contrast and the additional sweetness. When preparing it in the Thermomix®, it is important to add the ingredients in the correct order. Always start with the liquid ingredients and the eggs before adding the dry ingredients. Make sure you don't knead the dough for too long, otherwise it can become tough. The kneading stage is ideal here to mix all the ingredients well without overworking the dough. For the crumbles, it is important that the margarine is cold so that it can be processed well into crumbles. If the crumbles get too warm, they can stick together. The recipe is already suitable for a vegetarian version. To make the cake vegan, you can replace the egg with an egg substitute (e.g. apple sauce or flaxseed egg), the curd with a vegan curd alternative and the margarine with a vegan margarine. Instead of cinnamon, you can also use other spices such as cardamom, nutmeg or cloves to give the cake a special touch. If you like it particularly fruity, you can mix a few raisins or chopped nuts into the apple sauce. The curd cake tastes best lukewarm, but it is also a treat cold. It goes perfectly with a scoop of vanilla ice cream or a dollop of whipped cream. A glass of cold milk or a cup of coffee round off the taste experience. The cake can be prepared well in advance. You can prepare the dough and the crumbles the day before and store them in the refrigerator. However, you should only put the apple sauce on the dough shortly before baking so that it does not soak through. The baked cake can be kept in the refrigerator for up to three days. You can also freeze it in portions and thaw it again if required. This way you always have a piece of grandma's cake ready to hand.
