Description

This dish of tortiglioni with caramelized onions and breadcrumbs is true comfort food! The sweetness of the onions, slowly caramelized, goes perfectly with the crunchiness of the toasted breadcrumbs. A simple but flavorful first course, perfect for a family dinner or a quick lunch. I often prepare it when I want something tasty but don't want to spend hours in the kitchen. An extra idea? Add a sprinkle of grated cheese for an extra touch of deliciousness!

  • 350 g tortiglioni
  • 4 piece onions
  • 4 tbsp breadcrumbs
  • 100 ml white wine
  • extra virgin olive oil
  • fine salt
  • pepper
  • grated cheese, Parmesan or Pecorino

Sliced ​​onions

Peel the onions and cut them into thin slices. Set aside.

Caramelized onions

Pour a drizzle of extra virgin olive oil into the bowl. Add the sliced ​​onions and cook for 20 Min./120°C/Speed 1.

Add the white wine and cook for another 5 Min./100°C/Speed 1, without the measuring cup, to evaporate the alcohol.

Add salt and pepper

Add fine salt and freshly ground black pepper to taste. Mix gently with the spatula and transfer the onions to a bowl. Clean the bowl.

Toast the breadcrumbs

Pour a drizzle of extra virgin olive oil into the bowl. Add the breadcrumbs and toast for 3 Min./120°C/Speed 2.

Cook the pasta

Meanwhile, cook the tortiglioni in plenty of salted water according to the instructions on the package. Drain the pasta al dente.

Season and serve

Pour the drained tortiglioni into the bowl with the caramelized onions. Add the toasted breadcrumbs, a drizzle of extra virgin olive oil and grated cheese to taste. Mix well and serve immediately.
