Description

This Spanish cod omelette is a traditional and delicious recipe, perfect to enjoy as an appetizer, starter or even as a light main course. The desalted and shredded cod is combined with beaten eggs and a touch of garlic and chilli pepper to give it a unique flavour. The texture is soft and juicy, and the touch of fresh parsley further enhances its flavour. It is a very easy recipe to prepare with the Thermomix®, ideal for any occasion. I often prepare it for a weekend brunch or a quick weekday dinner. It is a guaranteed success! It is prepared in about 45 minutes.

Ingredients (7 ingredients)

  • 750 gramos Clean cod loin
  • 8 piece Eggs
  • 2 clove Garlic
  • 1 piece Chilli pepper
  • 1 pinch Salt
  • 125 mililitros Olive oil
  • 1 bunch Chopped parsley

Cod preparation

Make sure the cod is clean, without skin or bones. Shred it into small pieces and set aside.

Flavouring the oil

Insert the peeled garlic cloves and the chilli pepper into the Thermomix bowl. Chop for 3 seconds at speed 7. Remove and set aside.

Cook the cod

Thermomix® Setting
5 min/248°F/Speed 1 120

Pour 100 ml of olive oil into the Thermomix bowl. Add the reserved garlic and chilli pepper. Program 5 minutes, temperature 120°C, speed 1.

Add the cod

7 min/212°F/Linkslauf Speed Schaufel 100 Reverse

Add the shredded cod to the bowl. Program 7 minutes, temperature 100°C, reverse rotation, spoon speed. Season with a pinch of salt and add the chopped parsley.

Drain the cod

Remove the chilli pepper from the bowl. Pour the cod into a strainer to remove excess liquid. Set aside.

Beat the eggs

In a separate bowl, beat the eggs with a pinch of salt.

Mix eggs and cod

Add the drained cod to the beaten eggs and mix well.

Cook the omelette

Heat the remaining 25 ml of olive oil in a non-stick frying pan over medium heat. Pour the egg and cod mixture into the pan.

Set the omelette

Cook the omelette over medium heat until set on both sides. Carefully turn it over so that it cooks evenly.

Rest and serve

Let the omelette rest for about 10 minutes before cutting it into portions and serving. Accompany with a fresh salad or bread.
