About this recipe

Savoury tuna swirls are a timeless classic, a comfort food that takes me back to my childhood. I remember that my grandmother often prepared them for her grandchildren's birthday parties, and they always disappeared in a flash. Her version was a little different, more rustic, but the flavour of the tuna and puff pastry was always irresistible. I wanted to reinterpret that recipe, simplifying it with the help of the Thermomix®, to make it even faster and more suitable for today's hectic life. The secret of these swirls lies in the quality of the ingredients. The tuna, strictly in olive oil, must be well drained to prevent the filling from being too moist. The spreadable cheese, on the other hand, gives creaminess and binds all the flavours. I prefer to use a light spreadable cheese, but you can opt for a more flavourful cheese, such as robiola or stracchino, if you prefer a more intense taste. A pinch of freshly ground black pepper enhances the flavour of the tuna and adds a spicy note. The preparation with the Thermomix® is incredibly simple. Just put the ingredients in the bowl and mix for a few seconds. The Thermomix® will perfectly mix the tuna and cheese, creating a homogeneous and creamy filling. It is important not to mix for too long, otherwise the tuna could crumble too much. If you don't have the Thermomix®, you can prepare the filling by hand, mixing the ingredients in a bowl with a fork. For a touch of originality, you can enrich the filling with chopped Taggiasca olives, desalted capers or fresh aromatic herbs, such as parsley or chives. For a vegetarian version, you can replace the tuna with ricotta and spinach, or with a homemade basil pesto. For a vegan version, you can use a vegetable spreadable cheese and replace the tuna with crumbled smoked tofu. Savoury tuna swirls are perfect as an appetizer, snack for an aperitif or as part of a buffet. Serve them hot, freshly baked, to fully appreciate the fragrance and crispness of the puff pastry. You can accompany them with a yogurt and chives sauce, or with a homemade mayonnaise. They are also excellent on their own, simply accompanied by a glass of fresh white wine. If you have any leftover swirls, you can store them in the refrigerator for a couple of days, in an airtight container. Before serving, heat them in the oven for a few minutes, to make them crispy again. You can also prepare the swirls in advance and freeze them raw. When you want to cook them, thaw them in the refrigerator for a few hours and then bake them as indicated in the recipe.
