Description

This turkey ragout with dried apricots and peas is a hearty main course that is ideal for spring. The combination of tender turkey, sweet apricots and fresh peas makes this dish a special taste experience. Prepared in the Thermomix® it is quick and easy to prepare and is perfect for a lunch or dinner.

Ingredients (14 ingredients)

  • 1 piece Onion
  • 1 piece Garlic clove
  • 2 tbsp Rapeseed oil
  • 1 tbsp Paprika powder, mild
  • 1 tsp Turmeric
  • 400 ml Vegetable broth
  • 300 g Turkey breast
  • 200 g Peas (freshly shelled or frozen)
  • 80 g dried, unsulphured apricots
  • 1 piece Organic orange
  • 2 Stängel Smooth parsley
  • 1 tbsp Lupin or buckwheat flour
  • to taste Salt
  • to taste Pepper

Preparation (8 steps)

Chop onion and garlic

Quarter 1 onion and put 1 clove of garlic in the mixing bowl and chop for 5 sec./speed 5. Push down with the spatula.

Sauté onion and garlic

Add 2 tbsp rapeseed oil and sauté for 3 min./120°C/speed 1.5.

Sauté spices

Sprinkle in 1 tbsp mild paprika powder and 1 tsp turmeric and sauté for 1 min./120°C/speed 1.5.

Add vegetable broth

Pour in 400 ml vegetable broth.

Prepare turkey breast and load Varoma

Cut 300 g turkey breast into bite-sized cubes. Line the insert of the Varoma with baking paper so that the side slots remain free for steam circulation, and place the turkey breast pieces on it. Put 200 g peas in the Varoma. Place Varoma with insert on top.

Cook ragout

Place Varoma on top and cook everything for 20 min./Varoma/speed 1.

Prepare apricots and orange

In the meantime, cut 80 g dried apricots into strips. Wash 1 organic orange in hot water and finely grate 1 tbsp of zest. Squeeze the fruit. Wash 2 sprigs of flat-leaf parsley, shake dry and pluck the leaves from the stems.

Finish ragout

After the cooking time, remove Varoma. Add orange juice, apricots and parsley to the mixing bowl and thicken with 1 tbsp lupin or buckwheat flour. Season with salt and pepper and simmer for 3 min./100°C/speed 2.
