Description

This recipe for vegan coconut macaroons is easy to prepare and can be made in no time with the Thermomix®. These gluten-free cookies are an ideal dessert or finger food for Christmas time. With just a few ingredients, they are quick to bake and taste great for the whole family. Perfect for anyone looking for a vegan and delicious alternative.

Ingredients (5 ingredients)

  • 200 g Shredded Coconut
  • 100 g Sugar
  • 1 Päckchen Vanilla Sugar
  • 1 Prise Salt
  • 40 ml Agave Nectar

Preparation (5 steps)

Chop the shredded coconut

Place 200 g of shredded coconut in the mixing bowl and chop for 10 sec/speed 8. If necessary, use the spatula to scrape down the sides and repeat the process until the desired consistency is reached.

Add other ingredients and mix

20 sec/Speed 4

Add 100 g sugar, 1 packet of vanilla sugar, 1 pinch of salt and 40 ml of agave nectar to the chopped shredded coconut in the mixing bowl. Then mix for 20 sec/speed 4 until a homogeneous mixture is formed. If necessary, use the spatula to scrape down the sides and repeat the process.

Form the macaroons

Preheat the oven to 175°C top/bottom heat. Use your hands to form small macaroons from the coconut mixture and place them on a baking sheet lined with baking paper.

Bake the macaroons

Place the baking sheet with the formed macaroons in the preheated oven and bake for approx. 15-20 minutes until golden brown. The baking time may vary depending on the oven.

Let cool

Remove the baked coconut macaroons from the oven and let them cool completely on a wire rack.
