Description

Nothing beats homemade fresh pasta! With this recipe, easily make delicious tagliatelle. The dough is simple to prepare and the result is incomparable to commercially available dried pasta. I love serving these tagliatelle with homemade tomato sauce or simply with a little butter and parmesan. It's a comforting and tasty dish, perfect for a family lunch or dinner with friends. Preparing the dough requires a little patience, but it's worth it. Feel free to vary the flours for a different taste. A real treat!

Ingredients (3 ingredients)

  • 1 c. à s. of olive oil
  • 3 piece eggs
  • 300 g of flour

Dough preparation

Thermomix® Setting

Put the flour in the Thermomix bowl. Add the eggs and olive oil. Mix 2 Min./Knead setting. Form a ball with the dough, wrap it in cling film and let it rest for at least 30 minutes.

Tagliatelle preparation

Take a piece of dough, flatten it slightly and pass it through the rolling mill (pasta machine), opening the rollers to the maximum to start, then gradually tightening them with each pass until you obtain the desired thickness. (Flour lightly if necessary). Cut rectangles of dough according to the size of the desired tagliatelle. Then insert them into the rolling mill using the 'tagliatelle' accessory. Leave to dry for about ten minutes on a cloth just before cooking.

Pasta cooking

For 100g of pasta: 1 liter of water + 10 gr of salt. In a large saucepan, bring the water to a boil, then add the salt. Immerse the pasta, stir at the beginning and cook for 2 to 3 minutes no more. Drain and serve.
