Description

These chicken rolls with peppers are a tasty and colorful main course, perfect for the summer season. The recipe is simple and quick to prepare, ideal for a family lunch or a dinner with friends. The peppers, cooked in the Thermomix®, become soft and tasty, while the basil and fresh parsley give an irresistible scent. I love them because they are light and can be prepared in advance. A tip? Accompany them with a side of baked potatoes or a mixed salad for a complete and balanced meal. Enjoy your meal!

  • Chicken breast
  • Red peppers
  • Shallot
  • Butter
  • White wine
  • Basil
  • Parsley
  • Extra virgin olive oil
  • to taste Salt

Preparation of peppers and shallot

Wash, clean and cut the peppers into strips. Peel and finely chop the shallot. Insert the shallot into the bowl and chop for 3 Sec./Level 5. Transfer to a pan.

Cooking the peppers

Add a drizzle of extra virgin olive oil to the pan with the shallot. Add the peppers, a pinch of salt and some chopped basil leaves. Cook over high heat for about 5 minutes, stirring occasionally.

Preparation of the filling

Finely chop the basil and parsley in the bowl for 3 Sec./Level 7. Set aside.

Filling the rolls

Spread the chicken breast slices on a work surface. Distribute a little chopped basil and parsley, season with salt and pepper. Add the cooked peppers and roll the meat with all its filling, forming rolls.

Tying the rolls

Tie the rolls with kitchen string to prevent them from opening during cooking.

Browning the rolls

In the same pan where the peppers were cooked, add a drizzle of extra virgin olive oil. Arrange the rolls and brown them evenly on all sides over medium heat.

Deglazing with white wine

Deglaze the rolls with the white wine. Raise the heat and cook for about 2 minutes, so as to evaporate the alcoholic part.

Final cooking of the rolls

Add a pinch of salt and pepper. Lower the heat, cover the pan and cook for about 5 minutes.

Preparation of the sauce

2 min/140°F/Speed 2 60

Move the rolls and set them aside. Add the butter to the cooking liquid and cook in the bowl for 2 Min./60°C/Level 2, emulsifying with the whisk.

Serving

Serve the rolls topped with the freshly made sauce.
