Description

This creamy pasta dish with lemon is a real treat! The vermicelli are prepared in a light lemon sauce with a touch of butter and fresh cream. A dish that is quick to prepare and perfect for a light lunch or dinner. I often make this recipe when I need to be quick and still want to put something special on the table. The fresh lemon gives the pasta a wonderful touch. It tastes especially delicious with freshly grated Parmesan. An absolute favorite dish that I always enjoy preparing!

Ingredients (7 ingredients)

  • 320 g Vermicelli
  • 2 piece Lemons
  • 50 g Butter
  • 200 ml Fresh cream
  • 1 clove Garlic
  • 50 g Parmigiano Reggiano
  • 1 pinch Salt

Preparation (8 steps)

Prepare water

Bring a pot of water to a boil and add salt. Cook the vermicelli in it for about 2 minutes less than indicated on the package.

Chop garlic

Put a clove of garlic in the mixing bowl and chop for 3 sec./speed 7. Push down with the spatula.

Melt butter and sauté garlic

Put 50 g of butter in the mixing bowl and melt for 3 min./60°C/speed 2. Add the garlic and sauté for another 2 min./120°C/speed 1.

Add lemon peel

Cut the peel of 2 lemons (only the yellow peel) into fine julienne strips. Remove the garlic from the mixing bowl. Add the lemon peel (except for a small amount for garnish) to the mixing bowl and sauté for 1 min./120°C/speed 1.

Add cream and simmer

Add 200 ml of fresh cream (except for a small amount) and a pinch of salt to the mixing bowl and simmer for 5 min./90°C/speed 2.

Add pasta and cooking water

Thermomix® Setting
2 min/194°F/Linkslauf Speed 1 90 Reverse

Add the drained vermicelli (approx. 320 g) and 1 ladle of cooking water to the mixing bowl and mix for 2 min./90°C/reverse rotation speed 1.

Add Parmesan

30 sec/140°F/Linkslauf Speed 2 60 Reverse

Add 50 g of Parmigiano Reggiano to the mixing bowl and stir in for 30 sec./60°C/reverse rotation speed 2.

Serve

Serve the vermicelli al limone immediately and garnish with the remaining lemon zest and a dash of fresh cream.
